    Somewhat similar to preparation for grilling ears of corn. Can use other spices other than salt and pepper; which everyone who grills should know. This is a place and forget cooking with other meats or whatever one is smoking. Enjoyed the video; great job! Do you have a favorite type of wood to smoke corn with? What wood, in your experience, gives the corn a richer flavor?

      I will. Making a few pounds of beef jerky first thing in the morning, then I have a 3lb pork butt, and a few racks of pork side ribs ready to go. I've been smoking for just over a year now using my 22.5" Weber with a few mods for smoking. It was time to have a "dedicated" smoker. Thnx!

    I just got a Traeger and have been watching videos nonstop to gain knowledge compare recipes and styles. On most of the corn ones I’ve seen they say leave the silk on to soak and smoke since it will help retain the moisture. I’m curious why you remove the silk. Is it primarily because it would stick to the olive oil or is there a completely different reason?

    • @thnksno
      @thnksno 3 ปีที่แล้ว

      Been doing this for decades on a Weber kettle. I soak the corn in sugar water. Just mix in a cup of sugar as best you can with cold water, cut the top silk end off, then soak for at least 30 minutes. Don't peal the husk, but shake out excess water before cooking. On the Weber over indirect mediumish heat, it takes about 25 minutes to cook. I'm planning to try corn in my smoker tonight, was looking for more of time and temp. I think I'll be fine with a soak, shake and 250° smoke for about 40 minutes. I can't believe this lady cooked it for 2 hours. The quickest way I found to cook and serve, over a period of time (party), excellent corn, lookup "cooler corn."

    What type of wood do you prefer while smoking corn?

    • @Armadillopepper
      @Armadillopepper  6 ปีที่แล้ว +2

      Maple or a fruit wood such as peach or cherry. If you use something like mesquite or hickory, it is too much smoke for corn.

    The easiest and quickest way to remove the silks from the corn is with a stiff brush. I just use a toothbrush and it get all of the silk right off.

  • @johnking7911

    My way is even simpler. Buy corn, soak corn, smoke corn. No need to peel back the husks, no need to remove silk first, no need to add olive oil and seasoning. Just soak and smoke. Been doing it that way for years and get raves. I want to taste the smoke and the corn. If you want to season more do it at service to taste. I grew up in the corn belt and the corn should be the star. The silk comes off very easily once the corn is smoked.
