I was being very cautious to slightly sauté them. I was not about to waste this sauce so I added a little bit of brown sugar and I was able to balance out the flavor and it turned out amazing. My first time ever making tamales. And they were flavor upon flavor upon flavor. Thank you so much for sharing your family’s traditions. this is going to be added to my recipe box.
Its bitter because you soaked the chilis in the soup as the recipe showed.. What should be done is toast the chilis as shown. Then soak the chilis in water some hot water. drain that water. Then put the chilis in the blender with the soup. This should also be strained to get that pulp out for a smooth sauce but its optional.

Y'all are a beautiful couple, those tamales sure look good...my mom would put her molcajete in her large pot upside-down, then laid the tamales on it, all the way around.. the molcajete was laid on top of a wire rack..to allow for an inch and a half of water..😊

I recently made this recipe and I'm absolutely in love with the chicken filling. This was my first time making tamales and they ended up a bit soggy after steaming first for 50 minutes, and then for an additional 30 minutes. I let them sit for 10-15 minutes before unwrapping and was disappointed with the results. I think they still had a slightly doughy taste. I'm sure it was something I didn't do properly but I don't know if I steamed the tamales too long or not long enough. Is there any additional guidance you could offer and is there a fix for soggy tamales?
They look delicious but I prefer pork the most traditional way is with fat large.. So we indulge we don't have a them everyday we make them only for Christmas and New Year's, you're the color red looks very delicious. I'm sure people make it many ways thank you for sharing.

I've seen a recipe for making tortillas using masa harina which calls for only water and some salt. Is it possible to make tamales without using the fat?
I bought mine at my local farmers market. It’s called “mi Pueblo” it also has “MP” ingrained with what appears to be a sun around both letters. Hope this helps.
I just finished making these from your recipe. Things I learned is make sure the meat doesn't have too much sauce. Mine was too wet and dripping out of the tamale. The other thing I learned is buy A LOT of corn husks because 70% of them from the package were too small to use. I ended up with a bunch of tiny tamales because I didn't have any other big ones.
I hope you enjoy them. And yes, the filling shouldn’t have too much sauce. Next time, you can overlap the husks to make a big one. It takes some getting use to but works. Hope this helps 🙂

Spreadable masa moist fluffy tasty tamales. Moldable masa dense dryer not as tasty tamales. There is a difference.
