I’m just seeing this 2 years old recipe by this lady! She is ultra precise with instructions and I love that, her extra detail from cooking to cleaning the peppers and corn husk, to the shredding of the roast and picking out of little pieces before cutting! My wife and I followed your recipe to make our first batch of tamales ever. It was a success. The "mistakes" that we had were all on us. Too little masa and too much filling in each tamale. We omitted a lot of the salt, which in hindsight it really needed. You were absolutely right in saying that the process isn't hard, just time consuming. Seriously the hardest part for me was cleaning the corn husks. Now that we know what to expect, we will definitely make these again. Thank you again for inspiring us to step out of our comfort level. We can't wait to try some of your other recipes.

I have never made tamales but I decided to try following this recipe. Because I was press for time, I cooked my chuck roast 1 day (shredded and chopped then placed in baggie and refrigerated). Next day, I cleaned and cooked the chili. I blended and strained as said to do. Brought out my meat (warmed up) and added the chili sauce. I left my meat mixture in dutch oven and when cooled, placed back in refrigerator. Next day, cleaned the husks and setup my work area. My daughter made the chicken mixture and her daughter (granddaughter) brought the pre-made masa she purchased at mexican store. We took a chance and added reserved chili sauce to store bought masa...turned out fantastic. Took us 4 hours but was so worth it (received so many compliments). Already planning for next year. Now I have to start my own tradition of making them as best I can with only the hubs to help so when my sons come home for Christmas they can remember the delicious tamales mom and dad made for them . This video is wonderful! We lived in Corpus Christi, TX many years ago. Some of the ladies at our church made tamales at Christmas time and would take orders. They were so delicious! I always wanted to learn how to make them but the house they cooked in was small and there wasn't room. Oh how I miss all the delicious Mexican food we had available back then! That looks so simple. Back in the late 1940's/ early 1950's, my parents moved to New Mexico. They were blessed to live next door to a wonderful Mexican family. They became best friends so through the years, my mom learned how to make many amazing authentic Mexican dishes. I learned what I could from my mom, but never had the opportunity to learned how to make tamales before she passed. Thank you so much for your easy instructions. I am from Houston and we always had a cousin or 2 bring us authentic tamales that someone's sweet grandma made and sold in a local parking lot. No one in our family has attempted to make them. But they always disappeared before the turkey every year. I had a Mexican lady teach me how to eat them a few years ago with just salsa on them and it changed my world. If you get them at a Tex-Mex restaurant they always come with chili and cheese which is very good but salsa (even pace picante) is delicious. I am definitely going to try this recipe to serve to my family this year and i'll let you know how it turns out.

I grew up Yakima, Washington and had a lot of Mexican friends, I was blessed by having one of my friend's dear grandmother teach me how to make tamales almost 40 years ago and I've been making them a few times a year ever since with our home raised meat. I love your content so I watched your video to see if I could get any new ideas and I did, love the jalapeno addition and adding the Chile sauce to the masa dough. I'm making pork and beef tamales today and I'm going to try those additions. One thing I would like to suggest to you, is when you soak your corn husks put them in a cook pot, fill with hot water, weight with a plate that has a bowl with a lid filled with water or jars of water on top, put on the lid and then keep on a burner and if the water cools you can put the burner on a low heat for a short amount of time to reheat it. Thank you so much for all your wonderful recipes! Oh...if you don't have an extra pot you can put them in a big bowl with hot water, weight down, cover with foil or a lid and put in your oven on lowest temp.

I love the way you take the few minutes to give your corn husks extra care by rinsing them well, you’re going to effort to make these, why not do that to be sure they’re super clean!

Thank you so much for your question, I've never heard that before, but I do remember us running in and out of the house as children when my mama made tamales and nothing ever happened, they were always perfect and delicious...I always check for the masa to come away from the husk easy, and I always let them sit for awhile before eating them because the are a little mushy when very hot.❤

My mom and dad started the tamales for Christmas dinner 50 years ago. I do not know why. Maybe my mom didn't want to cook another turkey feast so soon after Thanksgiving. Burn out. So my dad was responsible in finding the tamales to buy every year. He found a family in Bishop, TX that made the best beef/pork tamales and we had a dozen dozen ordered for the holidays. My mom would make a huge pot of meaty beans. And a tray of 7 layer dip. Later on she came up with serving a queso sauce to everyones joy. Love your Video. And glad you mentioned the masa float trick. It make the masa so fluffy.

I have never made tamales but I decided to try following this recipe. Because I was press for time, I cooked my chuck roast 1 day (shredded and chopped then placed in baggie and refrigerated).
Next day, I cleaned and cooked the chili. I blended and strained as said to do. Brought out my meat (warmed up) and added the chili sauce. I left my meat mixture in dutch oven and when cooled, placed back in refrigerator. Next day, cleaned the husks and setup my work area. My daughter made the chicken mixture and her daughter (granddaughter) brought the pre-made masa she purchased at mexican store. We took a chance and added reserved chili sauce to store bought masa...turned out fantastic. Took us 4 hours but was so worth it (received so many compliments). Already planning for next year. That looks so simple. Back in the late 1940's/ early 1950's, my parents moved to New Mexico. They were blessed to live next door to a wonderful Mexican family. They became best friends so through the years, my mom learned how to make many amazing authentic Mexican dishes. I learned what I could from my mom, but never had the opportunity to learned how to make tamales before she passed.

I am from Houston and we always had a cousin or 2 bring us authentic tamales that someone's sweet grandma made and sold in a local parking lot. No one in our family has attempted to make them. But they always disappeared before the turkey every year. I had a Mexican lady teach me how to eat them a few years ago with just salsa on them and it changed my world. If you get them at a Tex-Mex restaurant they always come with chili and cheese which is very good but salsa (even pace picante) is delicious. I am definitely going to try this recipe to serve to my family this year and i'll let you know how it turns out.

I grew up Yakima, Washington and had a lot of Mexican friends, I was blessed by having one of my friend's dear grandmother teach me how to make tamales almost 40 years ago and I've been making them a few times a year ever since with our home raised meat. I love your content so I watched your video to see if I could get any new ideas and I did, love the jalapeno addition and adding the Chile sauce to the masa dough. I'm making pork and beef tamales today and I'm going to try those additions. One thing I would like to suggest to you, is when you soak your corn husks put them in a cook pot, fill with hot water, weight with a plate that has a bowl with a lid filled with water or jars of water on top, put on the lid and then keep on a burner and if the water cools you can put the burner on a low heat for a short amount of time to reheat it. Thank you so much for all your wonderful recipes! Oh...if you don't have an extra pot you can put them in a big bowl with hot water, weight down, cover with foil or a lid and put in your oven on lowest temp.

Thank you for the video. I love how well you explained each step. It's been a while since I made this so a refresher is always good. I use to go to my Mom for tip on how to but she been gone 2 1/2 years. My sister and I will try making them this next week. Thank you so much for your question, I've never heard that before, but I do remember us running in and out of the house as children when my mama made tamales and nothing ever happened, they were always perfect and delicious...I always check for the masa to come away from the husk easy, and I always let them sit for awhile before eating them because the are a little mushy when very hot.❤

My mom and dad started the tamales for Christmas dinner 50 years ago. I do not know why. Maybe my mom didn't want to cook another turkey feast so soon after Thanksgiving. Burn out. So my dad was responsible in finding the tamales to buy every year. He found a family in Bishop, TX that made the best beef/pork tamales and we had a dozen dozen ordered for the holidays. My mom would make a huge pot of meaty beans. And a tray of 7 layer dip. Later on she came up with serving a queso sauce to everyones joy. Love your Video. And glad you mentioned the masa float trick. It make the masa so fluffy.
