    1/2 cup sugar (100g)
    1/3 cup cocoa power (33g)
    2 cups whole milk (480ml)
    >> medium heat, stir frequently, not boil just stream
    >> in another boil
    2 large egg yolks
    2 tbsp cornstarch
    1/4 cup whole milk (60ml)
    >> whisk
    ready 2 tbsp unsalted butter (don't add in yet)
    >> drizzle in 1st mixture slowly while vigorously mixing 2nd mixture
    >> cook again to change consistently
    2 tbsp butter
    2 tsp vanilla extract

    I can't believe it never occurred to me that I could just MAKE pudding and I didn't need instant mix. It's already cooling in the fridge as we speak lol. Thank you for reigniting my love of baking, John!

    I also have been making
    Chocolate pudding since I was 9. I'm 73 now. We made it for my brother's bd every year into a chocolate meringue pie. I use the same ingredients but I put all together except the butter and vanilla in a blender, then cook it over heat whisking it until it boils while stirring for 1 minute. Then add the butter and vanilla. Kudos John.

      I always have trouble regulating the heat which is why I can't make decent eggnog but your recipe sounds much easier. Thank you.

    In the 60’s cooked pudding for dessert after dinner was very common. No pudding cups. Cooked on the stove earlier in the day so it could cool for dinner time. We always let a “skin” develop because that was the best.

      I make the jello cooked pudding once a week. Always had that as a kid. Top it with cool whip or follow John’s homemade homemade recipe. Never the instant pudding though 👎

    Thank you, John, for the great recipe and insipiration! My girls love the pudding and we cook it together! Always cook a double portion. One does not live long enough in the fridge. For extra chocolate pudding, I also add 25 g per portion of chopped dark (70%) Lindt chocolate at the end after butter - works perfect without espresso. Cheers!

    Made it with just one whole egg instead of two yolks, came out great too! I spreas it on a plate so it would cool down faster. meanwhile, I scrapped off every bit of it from the pot. thank you for the recipe 😋👍

    I tried this recipe for the first time today. I happened to have soy milk on hand, so I decided to try it with soy milk instead of regular milk. Other than that I followed your instructions to the letter. It came out beautifully and delicious. I also am one who likes the skin when it forms. I have always preferred pudding to mousse. I like it thick and rich rather than light and fluffy. Very quick and easy to make and very easy cleanup. I've tried several of your recipes and they always come out perfect, just the way I like them.

    TOTALY AWESOME! Have followed previous recipes where I've made the same mistakes as you have shown on your videos. But this time, I was able to get ahead. That's why I added the milk to the eggs BEFORE adding the Cornstarch, in order to avoid duplicating your mishap.😏

    my go-to is to whisk all the dry ingredients with the yolks. then add the cold milk while continuing to whisk. then put on the heat with the rest of the steps. works like a charm without scrambling the yolks or compromising the texture. easier and fewer things to clean! just the pot.

    Hi John this comment has nothing to do with pudding. Actually it’s about your fantastic recipe for white chocolate macadamia nut cookies. These cookies have totally driven my son off of the deep end he loves them and I am not very far behind him. The caramelization of the white chocolate is key 🔑 and although it takes some time, it is totally worth it. That caramelized chocolate makes the cookies. I made a batch for him on Saturday, I got 22 nice sized cookies he devoured almost half of them before he left my house to go home. He just bought some more macadamia nuts for me to make him some more cookies. My son (42 y/o) the Cookie Monster. 😂

    I just tried this recipe. It’s good! Super easy. If I can make it, anyone can! 😅 I used 1/3 monk fruit sugar and vanilla oat milk. It still tastes good.

    Well about 20 minutes after I watched this i had to make it. Just finished my hot bowl waiting on the cold version. It was delicious and I know what is in it super bonus.
    No more instant or cook pudding mixes. Going to look for the vanilla and banana version now 😊

    I've always used the Herhey's recipe. It uses three tablespoons of corn startch, no eggs. The rest of the ingredients are the same, just in slightly varying amounts. All in one pan, very fast and is smooth and creamy.

    Thanks for all your cool recipes! Who doesn’t like real chocolate pudding…we always made it as our go-to dessert for 7 people! I’m one who loves the skin on a cold pudding…I save it for the last few bites but of course lick all of the hot remaining bits in the spoon…don’t think me bad but if I think my milk has only a few days left before it turns, I always make chocolate pudding!!!

    To get Coco powder to dissolve add Coco, sugar & a splash of the milk until you have a wet sand like consistency. Stirring will use the coarseness of the sugar to dissolve the Coco powder. Doesn't take much. Add the rest of the milk & easy mode.

    This looks so good and reminds me of Snack Pack, which I loved, as a child! This is so much better, because it doesn't have any frankenfood in it! No GMOs! I need to try this. Thumbs up. (He forgot the pinch of salt). UPDATE: Tried this, and added 1/2 teaspoon of espresso powder, and this pudding was delicious! Super easy recipe. Fun to make, and even funner to lick the bowl and spoon. My husband and I both loved this.

    Can I use flour instead of corn starch? It’s hard to find where I live.
    Update: I found out I can substitute flour if I use 2 tsp flour for every tsp of cornstarch. Next time I will sift the flour into the mix though because it did cause tiny clumps. Still tasted really good so I’m planning on making it again. Thanks!
