  • @ladyflimflam

Its better to add the cocoa powder to the saucepan with just enough milk to create a paste. Then whisk in the rest of the milk, turn on the burner and procede. Cocoa powder is hydrophobic, that’s why it clumps in liquid and is difficult to incorporate, even with a whisk. Creating a paste and thinning that with the rest of your liquid overcomes that property. Cinnamon is also hydrophobic and should be added with the cocoa powder if using.

Tip: In a small bowl, mix half a tbsp of corn starch or corn flour and a dash of milk. When mixed, add it into the hot chocolate, it makes it thicker 😋

Mmmm, this brings back fond memories: when we arrived in France in '92, there was a little bar in Langeais, run by two sisters who had grown up working there with their father. It was like going back in a time capsule, sitting in this dark-paneled room watching the two white-haired, aproned mamies serve their clients. In a copper pan, they melted baker's chocolate in the milk individually for each cup, the best I've ever had in a café. A few years later they retired, and it's now part of a superette. * sigh *
I'll have to have a cup when it gets cold, with my 70% Ecuador chocolate from Lidl. Thanks, and happy, safe holidays to you.

I tried this receipt but with chocolate sweets 😅 because I don’t have chocolate and condensed milk because of no milk again haha . It worked out great because I chosen strawberry chocolate with no fruits inside and the sugar already inside . A tip is more water can be added to the condensed milk and cocoa powder to reduce sweetness ^^

    Recipe for one:
    1 ounce chocolate
    1 cup milk
Little less than 1 tbsp cocoa powder
    Spoonful of sugar
    Vanilla extract
Directions: Whisk the cocoa powder with the milk, and add the sugar. When the milk is on a low simmer, add the chocolate. Whisk until the chocolate is melted, for around 5 minutes. Serve.

I have a question. So you say you have used all types of milk, have you used almond milk with this recipe?
Because I want to use almond milk and when I make my hot chocolate I use three different types of chocolate; I use dark, milk and white chocolate and I use honey as a sweetener and for a little bit of flavoring I use cinnamon and nutmeg it gives it a nice taste
