Just made this with coconut milk and Ghirardelli semi-sweet chocolate. Even my dad, who isn't a fan of coconut milk loved it!! Its super thick and decadent, but easy on the tummy, which always was an issue for me when I would have the Swiss Miss version that I grew up with. I haven't had a good cup of hot chocolate/cocoa in years, and now that I found a quick, healthy recipe, I will definitely be making this more from now on!! thank you so much, Lisa!!
Its better to add the cocoa powder to the saucepan with just enough milk to create a paste. Then whisk in the rest of the milk, turn on the burner and procede. Cocoa powder is hydrophobic, that’s why it clumps in liquid and is difficult to incorporate, even with a whisk. Creating a paste and thinning that with the rest of your liquid overcomes that property. Cinnamon is also hydrophobic and should be added with the cocoa powder if using.
Thank u , I tried ur way and it's delicious. Then i changed it to 2 tea spoons of raw dark cocoa powder and 2 tea spoons of semi sweet chocolate with little of cow butter and very small pinch of salt
