In NSMBU, the night forest background depicts, well, a forest during the night. In SMM2, the night forest theme uses the stock night background. The same can also be said for the night snow, the night castle, and the night sky themes.
It's because Mario Maker uses sprites for entities instead of models. In NSMBU, basically only terrain and blocks are ice. In SMM2, only Mario is a model - everything else is a sprite.

Some of these seem to have performance reasons, some are just bit too weird and unfitting for MM2, some are obvious glitch fixes and rest is being lazy and not programming a new entity data for NSMBU and just using what SMB has.
It's because they elected to replace all the models (besides Mario) with 2D sprites, despite having the 3D world style, which keeps 3D models for everything. It's really obvious once you realize that's the reason - shells stop spinning in profile because they didn't make sprites for every direction. Dry bones doesn't lose its head because they didn't make a separate sprite for it. In NSMBU, all that stuff is dead easy, because they're already 3D models.
I think you were able to triple jump in U because you touched the ground a bit before the shell, and in MM2 Mario might be losing speed on the slope slides because of the single flat tile in the middle.

You forgot some: 1. In New Super Mario Bros. U, Toadette doesn't slip on ice (regardlessif she had the Penguin suit or not). In Super Mario Maker 2, Toadette is no longer resistant to slipping on ice, and will still slip 2. In NSMBU, Toadette could swim properly like if she had the Penguin suit. That's not the case in SMM2, as she swims like the others.
Nintendo should improve the NSMBU style for Mario maker 3 in 2024 or 2025 cuz they better stop being lazy and make the style more like the original game. More polished, more models and better quality! (Edit 1: Ok I’ve changed my mind. I think that they should change the style to the deluxe version in SMM3 and use 3D models there cuz I’ve seen levels in the 3D world style where they are kaizo och enemy spam levels with the 3D MODELS and it worked just fine. So why not do let nsmbu style have 3D models to for that matter? Like it would make the style look so much better and it would make the Mario Maker series stand out more. (Fun fact: in the first original Mario maker test game they used the actual 3D nsmbu style.)

You forgot some:
1. In New Super Mario Bros. U, Toadette doesn't slip on ice (regardlessif she had the Penguin suit or not). In Super Mario Maker 2, Toadette is no longer resistant to slipping on ice, and will still slip
2. In NSMBU, Toadette could swim properly like if she had the Penguin suit. That's not the case in SMM2, as she swims like the others.
Because that wouldn't be unfair at all
Nintendo should improve the NSMBU style for Mario maker 3 in 2024 or 2025 cuz they better stop being lazy and make the style more like the original game. More polished, more models and better quality!
(Edit 1: Ok I’ve changed my mind. I think that they should change the style to the deluxe version in SMM3 and use 3D models there cuz I’ve seen levels in the 3D world style where they are kaizo och enemy spam levels with the 3D MODELS and it worked just fine. So why not do let nsmbu style have 3D models to for that matter? Like it would make the style look so much better and it would make the Mario Maker series stand out more. (Fun fact: in the first original Mario maker test game they used the actual 3D nsmbu style.)

another difference: SMM2 Probably has a scarier anti-piracy screen then NSMBU
i think SMM2 has less quality in order to fit more important things without going over the storage limit
The NSMBU theme always annoyed me because it just looks really bad compared to the source material, and they did nothing to fix that in SMM2...
