Cozy Fall Recipes | COOK WITH ME | Autumn Harvest on the Farm

  • Cook with me today for some cozy fall recipes in my farmhouse kitchen! We are making radish pickles, borscht soup and apple crisp for dessert.
    Here are the recipes:
    REFRIGERATOR RADISH PICKLES
    Brine:
    1 c. Apple cider vinegar 1 tsp salt
    1 c. water 2 tbsp sugar
    2 (or more) bunches radishes
    *optional: peppercorns, bay leaves
    In a small saucepan combine the vinegar, water, salt and sugar. Bring to a boil to dissolve salt and sugar. Pack a pint sized mason jar with radish slices. Pour boiling brine to cover. Cover and keep refrigerated, once they come to room temperature.
    Makes 1 pint
    BORSCHT SOUP
    1 tbsp fat / oil
    2 large shallots or 1 large onion, peeled & diced
    2 cloves garlic, minced
    3 medium beets, peeled & grated
    3 large carrots, peeled, diced
    1/4 of a red cabbage, shredded
    3 large or 5 small potatoes, peeled & diced
    2 container beef or vegetable broth
    1 tbsp salt - or to taste
    1/2 tsp pepper
    1 tbsp lemon juice or vinegar
    1 tsp dried thyme
    Add later:
    1 small can tomato paste
    2 tbsp fresh dill, minced plus more for garnish
    sour cream for garnish
    In a large pot or Dutch oven, heat oil on medium heat. Sauté shallots/onion until soft. Then add beets, carrots, cabbage, garlic and potatoes. Cook for 5 minutes. Add broth, lemon juice, salt, pepper and thyme.
    Bring to a boil, then reduce to a simmer and cook on low for a minimum of 1 hour, or for several hours. A half hour before serving, add the tomato paste, dill and taste to adjust seasonings.
    Serve with a dollop of sour cream and a fresh spring of dill. Excellent with a German rye bread!
    APPLE CRISP
    Crumble Topping:
    1 1/2 c. Flour 1 c. rolled oats
    1 c. brown sugar 1 c. butter, softened
    1 tsp cinnamon
    4 c. apples, peeled & sliced
    1/3 c. sugar
    1 tsp cinnamon
    Butter a casserole dish and preheat oven to 375 degrees F.
    In a bowl combine the sliced apples, sugar and cinnamon. Toss to combine. Pour into prepared casserole.
    In the same bowl combine the crumble ingredients. Mix thoroughly (hands are best!) until crumbly looking and thoroughly combined. Sprinkle overtop the apples.
    Bake in preheated oven for 40-45 minutes.
    Serve warm or room temperature with vanilla ice cream or whipped cream.

    Ive had cold borscht soup, will try this one. Also I will make the apple crisp, just got some apples from local orchard near me. Watching from So California. Thanks for the video

    We make a very similar apple crisp. I also grew up with having it quite a lot especially this time of year as my grandma made it often.

    The bread is dense and hearty. We love it with liverwurst and thinly sliced onion. But it is delicious with Limburger cheese. ❤

    I have tried the German rye bread. Aldi has it as a specialty item in the fall. We have it toasted with slices of cheese on it. Thanks for the recipes! -- Barbara

      Yes, soups are warm and comforting in the cooler months. Our nights are getting colder, but it’s still hot during the day here in Canada.

    Hi Suzanne, I enjoyed your video today. Lovely recipes. I have never tried that bread but have seen it in stores like Cost Plus World Market here in California. Being half german, my grandparents loved dark breads. Me not so much. Tks. Karla in Cali.

    If you like to make your own bread, buy yourself Rye flour and follow a recipe for german rye bread. Not difficult, just different, most cheaper and homy option.

      I definitely plan too. I have been keeping my sourdough starter alive all summer, but during our busy season it is hard to find the time. I’ve just starting to get some extra time to bake 😀

    Love the video, but just as a point of reference Borscht doesn't generally have meat (my Ukrainian grandmother used sometimes a chicken broth, but never actual meat)
    ALso using bacon grease would kind of negate the "vegetarian" right?

      I’ve never used meat, I’ve just seen a lot of recipes vs online using meat. I prefer not too. 😊 Yes, I just use the bacon grease because I have it to use. But if someone is strictly vegetarian, I listed in the recipe to use your preferred oil.
