I believe I would have done this a long time ago, had I known how nice it would be to have nights off here and there. Now I feel like I should always have back up meals in the freezer. That must have been so nice for you during your recovery ❤️🩹
I’ve never eaten a parsnip, do they taste similar to potatoes? I love your idea of honey in the sauce, I’ll have to try that. I use maple syrup in mine. So good! What a great video! 👩🍳
Thank you! ❤️ I had only had parsnip a couple of times before growing it myself. I always say that they remind me of a cross between a carrot and a potato. They have a slight sweetness to them, but the also have more substance to them, like a potato. I wouldn’t say they are starchy though. I have used them in soups and stews, and you’d hardly know that it wasn’t a potato!

I want to try the ricotta for starts, it looked easy to do when I followed you. I would like to make the lasagne and stuffed shells. Well, thank you for the video and recipes. Not only do I not have the freezer space for that, but it can be expensive. Now that I have experienced doing a weeks worth, it’s totally doable! And it made my life so much easier. I highly recommend giving it a try!
Everything looked delicious! I used to make single serving freezer meals but now with my family we don’t have a big freezer to store the larger pans. Having a larger freezer is definitely a wish list item for one day.
I have 2 fridge freezers (just the regular top space), plus a small apartment sized deep freeze. It has been enough, I just need to do a deep clean and re-organize! A big deep freeze would be so nice! 😀
These meals look incredible!! In my family, we love to add shredded carrots to tomato sauce! Helps use them up, and they add a bit of extra sweetness that sometimes the tomatoes lack.

Thank you so much! So glad you found me! 😀 What you want to do is undercook the noodles a bit. They should have some flexibility, but not be fully cooked, as they will cook more in your sauce. Once they are at that point, I rinsed mine in cold water to stop the cooking and toss them with a bit of oil. Hope that helps!!

It is a rather dry root, so it actually lasted in the bottom of my fridge for months before I preserved it! I simply peeled it, chopped and put it in my food processor and chopped it finely. Then I put it in a mason jar and poured apple cider vinegar over it. Super easy!!
Ha!! That was my first Dutch ovens. I found it at the thrift store (in rough but working condition) for $2. It was ugly, but it worked, and I used it to make sourdough bread. It was stained like that when I bought it. Then, for Christmas last year, my daughter bought me the white one, which I love! It’s so pretty. I considered getting rid of the awful one. But I guess it’s in my mind that it is still functional. Oh man…. Maybe it’s time 😂
Thanks! I never knew that. We ate this a lot growing up, and we always called it Shepherds pie 🥧 Suprisingly, the parsnips were not too sweet. But they are large and have been in storage for months. The young smaller ones are probably sweeter!
