    Souffles always intimidated me. One evening I was working out with free weights. I had her souffle episode on repeat and watched it, more or less, three times. Around nine p.m., I finished my routine, toweled off, and went directly into my kitchen. Less than an hour later, my very first, absolutely picture perfect souffle was on the table. Delicious! They've been a favorite ever since.

    This was a refreshing revelation. I have never attempted a souffle after witnessing the histrionics which some people find necessary. One friend meditated before starting and played Mozart while it was in the oven and insisted that anything else ( Beethoven in particular) brought disastrous results!

    Of course what Julia makes seem simple now is the result of years of horrible results while she was learning her craft in France. Each episode needs to be viewed multiple times while we are taking notes. She has the skill to convey the appropriate technique and include, implicitly, her errors while she was herself learning. So valuable.

    She whipped those egg whites into stiff peaks from 9:09 to 10:44 , that’s only 1 min 35 sec 😱Wow! She had some super strength in those hands. (And while talking simultaneously)

    Her comment of eggs being inexpensive shows change of eras. I pay $8 for 20 large eggs🤨. ( I’m allergic to antibiotics in commercial eggs so have to buy organic and live in California)

    Interesting that she uses an electric range. I suppose it was due to the General Electric sponsorship. She manages to deal though I'm sure she would have preferred a gas flame.

      Electric appliances were considered high tech back then. It also would have been difficult/expensive to outfit the TV studio with gas.
      My next stove is going to be induction. I'm tired of paying $25/month for just the gas delivery and I'm tired of heating up my kitchen every time I cook.

      Nyx has the right of it, WGBH's studio was used for several programs and not just The French Chef. Putting in a gas line would have involved prohibitive costs all around. Much better when they wheeled in Julia's "kitchen" for filming they could just plug the range in. Julia's range she used at home and now at the Smithsonian was a huge gas range.

      @@chrisben3 For the first several years of the show, it was taped on a set in the basement of the Cambridge Electric Light Company. Wouldn't have looked good for a municipal electric company hosting the show (along with a GE sponsorship) to be promoting gas appliances.

    She did a great job with the egg whites, but didn’t use nearly enough milk in the sauce base because you can see it came out super lumpy once she folded in the egg whites.
