That reminds me of a dish a friend used to make wayyyyy back in the day!. She would fry potatoes, add cooked hamburger meat, canned tomatoes, and then add a can of corn... If anyone knows the name of that please share it. I've made it several times over the years, and it's so delicious!

In England it is simply ground meat and potatoes ( without the cilantro). I usually cook it the Indian way but will try yours. Not sure I would add another starch (rice) but veggies always work.Thanks for that take on a popular recipe.

Add a sunnyside cooked egg to it and you've got something more substantial. A sprinkle of Tabasco sauce makes this more of a breakfast. Corn or flour tortillas on the side, as well. I must more prefer Spanish rice, myself.
Angelica, I have this simmering on the stove now and will have it for lunch once the potatoes soften a bit more. I will admit though I made a hybrid of your chipotle rice and added the cup of frozen mixed veggies to that instead of making the Arroz Blanco. I think this dish will be bold enough to stand up to that rice. I just love that chipotle rice so much, it's maybe the best way I've ever made rice. It doesn't go with everything but when I think it will I make it. 😋 Can't wait to taste the Carne con Papas!

I feel like rice doesn't compliment potatoes with hamburger meat that well lol idk i would think something to balance out all the starch and meat right? Like corn or broccoli or just plain veggies.
I've got away from the serving method of piling the entre on top of the rice and much prefer the rice on one side of the plate and the entre beside it.
I always sautee the onions after the meat, after the juice evaporated, otherwise the juice boils the onions and the bouillon is already the salt. I'd add a drizzle of olive oil on the rice also. Just sayin'... 🤷🏼♀️
I never buy canned tomato sauce - I always use my bottled salsa, or bottles of ketchup. Salsa has all the Mexican ingredients, & ketchup has all the regular every day spices I use for tomato based stews.🙂
