Today we were blessed to be invited to celebrate ONAM for the very first time! This is South India's biggest festival of the year! We celebrated with over 500 people and got to witness beautiful dancing and the food was super delicioussss!!! This will give u some hint of what kind of food we have at home. It’s very different from what u get in the restaurant.
It's all about mixing the flavours while you dine the great South Indian cuisine😊. The pickle, pachadi/chutney , these are condiments that you mix a bit by bit with rice and sambar/curd/rasem to enhance flavours. Main curry is Sambar, added along with raasem soup and curd. Side dishes will be the aviyel or mixed vegetable coconut dish, some masala potatoes, fried beans,egg plant dishes,okra etc. This is added with crispy items such as fried cauliflower, chips, fried dried peppers called vatthel, crackers like papadem or apalappu. Ghee and salt will be there if needed to add more flavour. Then , there is this payasem sweet drink full of cashews😊, eaten along with banana and sometimes halwa or jalebi as dessert. Of course it is best to eat on a banana leaf and the usage of right hand is required to fully enjoy this magnificent dish😂

Pickles are of different kinds in India, u got Mango, lime, garlic, chili, cucumber, ginger, greens etc.. Spice comes from Chili powder, its added according to the taste..

Jaggery is unprocessed sugar intermediate.

Always remember 🥭 pickle or achar even that ginger 🫚 never tasted directly its made from mango lemon many kind of verity is present in market so whenever u heard achar or pickle its very savory and tangy taste So always remember 😃 we have to always take a littel pinch of pickle & mixed with rice or lentils and then we eat.
Pickle is not a dish it's a side dish for example when we need salt or spiciness that time people take little achar or pickle because it got salty and masala in it so it increases taste same like papad which is round & crunchy.
And that rice mostly southindian people cook but it's very healthy and light in tummy because as per my knowledge it's made by boiling so even surger content also left less in that rice. 🍚
And always remember whenever u see any gravy kind of thing in India dish so always mixed with a combination with rice 🍚 roti or paratha it's a form of roti only but same like Nan roti. Never eat any indian gravy that's why all american feel spicy indian mixed gravy and rice and then eat.

Jessica.....you are supposed to eat each item with rice not alone....60% rice and 40% curry and put little ghee andproperly mix everything and then eat.....incase of achaar or pickle then it should 85% rice and just 15% pickle and some ghee properly mix and eat

A sadya is always served in plantain leaf. Without banana leaf you can't serve all the items properly. And there is a proper placement of items. Mango achar(red one), ginger achar(black), etc are items that are taken in very less quantities and so served on the far left hand side away from the center where all the action happens. Aviyal, thoran, pachadi, etc are served on top where it can be accessed easily and in large quantities. Once eating starts, dal(lentil curry) is served first with ghee, then comes sambar, then comes pulisheri which is very sour so to balance as per our taste requirement, olan is served along with pulisheri. All of them have a placement and previous generation would be very angry without if items are misplaced. Only then right quantities can be served, easily accessed, etc. Even a blind can get the items on a sadya leaf without any issues sue to the correct placement. Then the payasams and finally buttermilk. To enjoy payasams to fullest, have them directly from the leaf.
