  • Last week I celebrated Onam with traditional Sadhya meal.
The best part about this festival food is ingredients are locally sourced and flavors bring out the culture and tradition of that region.
Some of the Sadhya dishes served are
    Rice: Red or brown rice
    Parippu: Lentil curry
Rasam: A thin, spicy soup with tamarind, tomato and spices
Sambar: Lentil curry with tamarind and vegetables
Kaalan: Made with curd, vegetables or root vegetables and coconut
    Avial: Mixed vegetables with coconut
Olan: Includes gourd, peas and coconut
Koottukari: Banana or yam cooked with chana
Erissery: Pumpkin and black-eyed peas curry in coconut milk
Pachadi: Sour or sweet raita made with curd and cucumber or pineapple
Pulisseri: Thin yellow curry sweet and sour curry made with tamarind and cucumber
Thoran: Mixed vegetables cooked with grated coconut
Payasam: Three to four types of payasam is served as dessert.
The other dishes include banana, pickles, papad, banana chips, ghee, buttermilk etc.
    Happy festivities to everyone

A lot goes into preparation of Sadya. Did you know, when serving the meal, the spoon must not touch the banana leaf plate.
Sadya variations changes when you travel in kerala from trivandrum to kasargod.
The banana leaf is divided into two portions. Top part for all the items, lower portions only for rice.
The placement of the curry items is very essential.
Folding the banana leaf from lower portion to upper half means that you have enjoyed the meal. Folding it otherwise means that you didn't enjoy the meal.

To add that ..each accompaniment like Papadam & Condiments (Banana Chips ,Jackfruit Chip and Sarkara varatti ) ,Curry has its place from Left to Right . While serving with rice which Curry comes first and last that too has a meaning .

Wow. Proper Sadhyaam you guys had. Nilesh Bhai ke tau mazze hain - and again.
What I love about the Sadhyaam is that the flavours are an array of all that there is to offer in the Indian cuisine that tingles your taste senses - sweet, salty, sour (tangy), bitter sometimes and chilly. All done in a way that you also enjoy the flavour of the base ingredients.
A Sadhyaam is a true vegetarian feast and enjoyed best on a banana leaf, which some research suggest, secretes a special resin when hot food is poured on it that helps remove toxins from intestines. These Saadhyam / Sapad style meals are so satisfying that I tend to overeat. Remember loosening the belt a few times.
The payasam, papadam and parrarram or banana (the parrarram - pronouced with the alphabet "ळ" twice that mostly only Keralites can pronounce correctly) is combo so traditional and authentic that one sees this only in old meal restaurants in Kerela.
In traditional festive and religious meals down south, even pickles are prepared same day morning after pooja of the kitchen so this makes it super fresh meal. Imagine having this in Kerala - fresh veggies straight from the farms to your banana leaf in a few hours and in the locally produces spices.
Thanks again for a lovely visual treat. Thanks Kunal for not shying away from licking the fingers - this is what true great Indian food compels you to do - lick those flavours off your fingers.
Cheers to one more episode and looking forward to more - bolo na next week Khane Mein Kya Hai. I am guessing Non-Veg as Shravan has ended and so have some other festivals and there is a small interval before the all important festival of Ganeshostav starts.
I wish you do a great Maharashtrian pangat style meals in Ganeshotsav. With varan bhat, usal, some alu vadi / kotambir vadi and the most important ukadiche modak dipped in toop. Nilesh bhai - pls push this idea. I also know someone who does this really well.
    Thanks and cheers,
    MK

Bahut hi swadisht bhojan ka aanand uthaya aapne Kunal saab. Zaroor aapko bahut pasand aayi hongi.
Agar main galat ho toh maaf karna lekin jab aap aapka banana leaf aapke taraf mod lete ho toh aapko khaana achcha laga yeh sanket hain aur aap agar banana leaf aapse hatkar saamne ki taraf mod lete hain (jaise aapne kiya) toh yeh avoid karne wala khaana hain aisa maanna hain (usually kisi ke guzar jaane ke baad 16th day khaana jab khaate hain toh aise mod lete hain). This is what I have learnt. Correct me if I am wrong friends and I am sorry if I hurt anyone unintentionally.

According to Vaishnava mythology, King Mahabali defeated the Gods and began ruling over all three worlds. King Mahabali was a demon king who belonged to the Asura tribe. The kind-hearted king was much-loved by the people. The Gods got insecure of King Mahabali’s popularity and Lord Vishnu to step in and help contain Mahabali.
Lord Vishnu took on his fifth avatar, in the form of the Brahmin dwarf Vamana, and paid a visit to King Mahabali. King Mahabali asked Vamana what he wished for, to which Vamana responded, “three pieces of land”. When Vamana was granted his wish, he grew in size and in his first and second pace respectively, he covered the sky, and then the netherworld.
When Lord Vishnu was about to take his third pace, King Mahabali offered his own head to the God. This act impressed Lord Vishnu so much that he granted Mahabali the right to visit his kingdom and people every year during Onam festivities

Asura King Mahabali was trying to perform Yatnja for announcing his victory over all 14 Higher & Lower realms. King Mahabali was considered as good ruler by humans in Bhooloka(the 7th realm) because he was generous and devotee of the God. But Devas were feared of Mahabali, so Deva King Indra informs Lord Vishnu about Mahabali's act of arrogance by intruding Devaloka and other 7 higher realms. King Mahabali was a great devotee of Lord Vishnu, although for re-establishing dharma in all 14 realms, Lord Vishnu took Vamana avatar.
Vamana visited the place where Yatnja performed. As a brahmana bikshu Mahabali need to offer biksha to Vamana, Vamana asked three foot land. Asura Guru Shukraacharya warned Mahabali about vamana's entry and tried to stop vamana's biksha.
But Mahabali agreed, Vamana started measuring 3 foots. Through Lord Vishnu's maya, Vamana became giant.
For the first 2 steps he measured Lower & Higher realms, Vamana asked Mahabali, where put third step, Mahabali realized his adharma, he showed his head. After the defeat Lord Vishnu sent back Mahabali to Sutalaloka(the 10th realm), And blessed to become next Indra in next Manuanthara. Mahabali allowed to visit humans in Bhooloka(not only kerala, the whole bhooloka) this day is Thiruvonam/Shravana day in Chingam/Simha month.
People welcomes Mahabali with Thrikkaraappan/Mathevar/Vamana at every home in Kerala. People worship them as Pyramid shaped structure made by clay/wood and performs pooja on them.

A typical Sadhya comprises 26 dishes or more. During Sadhya, towards left to right the dishes are arranged in the order of acidic to alkaline. The acidic dishes are on the left hand side and they are often starters and tangy dishes. Towards right one can see more healthy and alkaline dishes. Parippu curry or dal curry is the first type of main curry on your leaf plate or ela and it is treated as a starter. Then sambar, moru curry, and rasam comes. Finally, the sadhya ends on a sweet note with payasam. It can be truly defined as a melange of flavors, colors, and taste. You experience all tastes in a single ela. Belated Onam Wishes to Everyone.

Too good. pre Corona I had gone to Deluxe restaurant at Pitha street for such food. Their food is the closest to authentic Kerala Sadhya and they serve on banana leaf. Unfortunately they were closed becs of lockdown for quite sometime. Now after watching this video Im praying they are open. Will call and find out and if they are open - im there tomorrow !!! For people like me where food is the Only Solace, lockdown times were extra depressing. Missed a lot of deliciousness.
For people who might read my comment and dont know about this restaurant, this is a small non descript place on Pitha street opp Citibank building at Fort. the banana leaf meal is served on the 1st floor. their so called limited thali is still unlimited as they serve more helpings of anything you want to repeat. cost was just Rs.190 two years ago. I hope its open now.

This is another feast I enjoyed since my childhood. I would never miss any South Indian weddings just to eat this kind of meal on banana leaf. This meal tastes so organic n flavourful. Nowadays you get to taste sadhya meals only on festivities. These days In weddings food is so westernized that it misses the authenticity. I miss this kind of purity in food nowadays.. love this tho. 👌👌😊😊
