How to Make Crispy Thattai | Perfect South Indian Snack Recipe

- Welcome back to Happy Taste Buds! 🍽️ In today’s video, we’re diving into the world of traditional South Indian snacks with this crispy and flavorful Thattai recipe. These golden, crunchy discs are perfect for any festive occasion or just to enjoy with a cup of tea.
🌟 Ingredients:
• Rice flour - 1 cup
• Urad dal flour - 1 1/2 tblspn
• Roasted bengal gram flour - 1 1/2 tblspn
• Chana dal - 1 1/2 tblspn (Soaked in water)
• Red chili - 4 nos
• Kashmiri chili - 4 nos
• Garlic - 4 cloves
• Sesame seeds
• Asafoetida (hing)
• Curry leaves - finely chopped 2 tblpsn
• Salt - 1/2 tspn
• Butter / Hot oil
• Water
• Oil (for frying preferably Peanut Oil)
📝 Instructions:
1. Warm the rice flour to make it free flowing
2. Prepare a masala paste by grinding Garlic, Red chillies and Kashmiri chilli
3. Mix all the ingredients and the masala paste
4. Add butter or hot oil for improving the binding
5. Prepare the dough by adding water in small portions to Chappati dough consistency
6. Flatten the dough into small discs.
7. Deep fry until golden brown and crispy.

• Ensure the dough consistency is right for easy shaping.
• Fry on medium heat for even cooking.
• Fry few more seconds after the sizzling subsides.
• Store in an airtight container after cooling to room temperature to retain the crispiness.
