Running only on a HobbyStar 6s lipo through the Max5 paired with the Rocket 1720kv brushless motor. Looking for a rough top speed on a 39 tooth mod1.

Nice run. That esc has current limiting and isn't designed for speed runs, hence it cutting out at the top end. You need a castle creations mmx8s or xlx2
