- SUDANESE BEEF DAMA | BEEF STEW
Beef dama is a Sudanese/South Sudanese is a beef stew. It is a dish that is made in many Sudanese house holds. This recipe is made with a blend of spices (mainly black pepper, coriander and cumin) which are found in most Sudanese cooking. Add garlic and you've got the authentic Sudanese dish.
I have made this my own way and added curry powder which is not found in general Sudanese cooking.
INGREDIENTS LIST:
3 large onions
1 kg beef
Canola oil for cooking
1 can of diced tomatoes
1/2 green capsicum
4 garlic cloves
2 tablespoons vegetable stock powder
1 tablespoon coriander powder
1 tablespoon cumin powder
1 teaspoon curry powder
1 cinnamon stick
Salt to taste
Black pepper to taste
HOW MY FAMILY & I EAT THIS: This goes well with rice, bread rolls or Chapati, however, we prefer it with rice. It can also be eaten with kisra, a Sudanese thin fermented bread that is similar to crepes.
