Lamb stew with okra

    Equipment:
    • Medium saucepan
    • Wooden spoon
    • Hand blender/potato masher
    Ingredients:
    • 300 gm lamb
    • Two cups of water
    • 2 large onions
    • 1 ½ Cup of tomato sauce or 300gm chopped tomatoes
    • 200gm or half bag of frozen extra zero okra
    • ½ - 1 teaspoon salt
    • Stock(chicken or lamb)
    • Spices -1 tsp cumin
    ¼ tsp black pepper
    ½ tsp coriander
    ½ curry powder (optional)
    • ¼ sliced green and red pepper
    • 3-4 Cloves of minced garlic
    • One cinnamon stick(Optional)
    Directions:
    1. In a saucepan, add oil and onions then fry for 4-5 minutes on high to medium until the onions are soft nearly light brown. If you prefer to add curry, you can add it to the onions and fry it for one minute before you add the meat.
    2. Add lamb and continue to fry for another 3-4 minutes to seal it until greyish brown.
    3. Add one and cup of water and the tomato sauce then bring to boil.
    4. Turn down the heat, add stock and salt then cover and simmer for 20 minutes, checking half way.
    5. When the onions are cooked the sauce will be thickened, use the wooden spoon or the potato masher mash the onions being careful not to mash the meat.
    6. Add one cup of water, okra, green and red peppers, cinnamon stick (optional) and the spices. Bring to boil then simmer for 30-40 minutes, stirring sparingly until the okra is well cooked( check the okra seeds)
    7. Add the garlic 5-10minutes before the end of cooking time. Enjoy!
    Tips
    • You can try braised beef or chicken breast. When using chicken breasts, take the chicken out after cooking it for 15 minutes, add the okra and the peppers to the sauce and let it simmer for 30 minutes. Then add the chicken, spices and garlic, cook all for 15 minutes then serve!
    • Serves with boiled rice or slices of baguette.
    • Why not try to cook it without meat but add more onions to the recipe.
