    What happened to the guanciale? Using Pancetta is a typical American substitute. And where is the pepper?

    Tu sei italiano ed un italiano non può mettere il burro a sciogliere con la pancetta ma come è possibile?!
    Capisco che hai lavorato in UK e USA ma la tradizione è la tradizione e da italiano non puoi romperla.

    Only use yolks to make carbonara. Whisk them with cheese and black pepper. Dai Gino, studia le ricette autentiche italiane prima! Daje!
    Also, carbonara is a typical recipe from Rome not Sardinia...grazie.
