MULLA KOMBO || OKRA, SPINACH & BEEF STEW COOKED WITH PEANUT BUTTER & KOMBO (BICARB SODA/MAGADI SODA)

  • Kombo is a South Sudanese dish made by combining okra, spinach, meat, kombo (bicarbonate soda or magadi soda) & peanut butter. This recipe does not include onions or spices but since people cook it differently, other people add onions and spices.
    This is how I make my kombo. However, this meal has many different variations that may or may not include okra and spinach. The way it is prepared is dependent on which part of South Sudan you come from. It is not common in my area but I learnt how to cook it a few years back.
    INGREDIENTS LIST:
    1kg beef
    1kg okra
    250g frozen spinach
    Kombo (1 teaspoon) - (also known as bicarbonate soda or magadi Soda)
    Canola oil for cooking
    3 table spoons peanut butter
    2 chicken stock powder
    Salt to taste
    **Please note that the amount of kombo (bicarbonate soda/magadi soda) used is a matter of preference since it has a bitter taste and some people like it bitter, while others prefer it on the milder side.
    HOW MY FAMILY & I EAT THIS: This can be eaten with kisra (Sudanese flat bread), injera (Ethiopian flat bread) or asida/ugali (a popular East African staple dish made with maize flour)

    This looks delicious. I love both okra and spinach. I am curious about the kombo/bicarbonate of soda. Here it is white and often called baking soda. I have never seen it dark or sandy.

      What I’m using here is Kombo/magadi soda also known as soda ash. It maintains the dark colour and sandy form as it’s not processed.
      Baking soda or bicarbonate soda is white in colour and is a good alternative to Kombo because of its alkaline composition. Thank you

      Baking soda is an alternative for Kombo.

      Kombo gives the stew a very distinct taste. I stand to be corrected on this but I think it also gives the vegetables a nice bright colour.

      @@ab9822 you’re most welcome dear. Yes, you can use baking soda instead of Kombo when you cannot get Kombo since it is usually from South Sudan & Sudan. If in Kenya, it’s also known as magadi soda.

      Yes I used magadi soda. I usually use bi-carbonate soda when I run out of magadi soda
