    材料:
    1. 猴頭菇2個,
    2. 日月魚10條,用水浸軟備用
    3. 蜜棗2粒,
    4. 春雞 1 隻,
    5. 響螺 2個,
    6. 雞腳 6 隻
    Ingredients:
    1. Lion's mane 2 pcs
    2. Dried Asian Moon Scallop 10 pcs
    3. Candied dates 2 pcs
    4. French spring chicken 500-900 g 1pc
    5. Conch meat 2 pcs
    6. Chicken feet 6 pcs
    猴頭菇, 去除苦澀味:
    猴頭菇處理方法:
    1. 把猴頭菇浸水。
    2. 用手速成猴頭菇吸收水份再用手揸乾。並把所有黃色的水倒掉
    3. 猴頭菇的苦澀味必須經過這個方法才能除掉,否則破壞湯水的香味。
    4. 這個過程需要做六至七次,直到炸出來的水變清澈。
    5. 這時用一個小煲煲滾熱水 放入冰糖少許,把猴頭菇放入,隨隨煮滾45秒至1分鐘。
    6. 然後關火。讓猴頭菇在熱水浸上3分鐘。
    7. 然後把所有熱水掉走。並把猴頭菇揸干。
    8. 就完成處理過程,令猴頭菇不再有苦澀味。
    Treatment of Lion's Mane to take about its bitterness:
    1. Soak the lion's mane in running water like the video does
    2. Squeeze out all the liquid and soak the lion's mane again and squeeze out the liquid
    3. This process is to be repeated for a minimum of 7 times.
    4. Till you see the liquid become clear.
    5. Boil the squeezed lion's mane in a saucepan for 1 min with some rock sugar.
    6. Turn off the heat and leave the lion's mane to stay in the sweetened hot water for futher six more minutes
    7. At the running tape water, rinse the lion's mane and then squeeze out the water till you water is clear again. Then you are good to go.
    煲湯方法:
    一如以往方法把所有材料飛水處理,用清水沖走雜質,放在煲底,再放上飲用清水,蓋過材料,大火煮滾後,轉細火煲兩小時
    Soup Making:
    With all the meat products , No. 4-6, blanched them in hot water and then have all No. 1-6 put into the soup pot, then cover all the ingredients with drinking water, half tablespoon of sea salt flakes. Turn the stove to high heat till boiling, then, turn low heat and cover the lid for cooking up to 2 hours. You might need to check for over evaporation of liquid. If it does, add some drinking water to maintain the water level. Not too much at a time, but bit by bit.
    Result of this soup is pure white in color. No more bitterness from the lion's mane.
    High protein from the lion's mane at 22g per 100g. And the benefit from Dried Asian Moon Scallop is to offer high quality of sleep at night.

    根本唔使落雞脚,嘥晒煲湯,猴頭菇洗到冇晒色就可以,无需出水,再出埋水乜嘢营养都冇晒,落咗鸡脚成煲汤肥晒,根本就冇益。

      隻雞仔比較細,熱水落其實已經可以將出面啲污糟嘢清除,如果再怕有腥味可以落一片薑.所謂血水只不過係蛋白質,湯水完成後應該冇乜腥味,留意下急凍食品嘅出廠日期會唔會太耐所以鮮味流失,凍水落飛水主要都係為咗海鮮,比如鮑魚,怕佢個外觀受影響,

    用到鳮,响螺,鸡脚,煲湯唔好飲才怪,太曪唆,程序又怪。👎👎👎👎👎,手法不認同。
