Vietnamese Vegan Dipping Sauces | Nước Chấm Chay

- Traditionally made with fish sauce, nuoc cham is a fixture on restaurant and home dinner tables. Clear, light, and endlessly versatile the vegan dipping sauce has the magical ability to bring together many distinct flavours into a cohesive whole.
Use it when you want to eat bánh xèo, fresh rice paper rolls (gỏi cuốn ) or drizzle it over a rice noodle bowl (bún chay).
Basic vegan nuoc cham recipe
3 tablespoons sugar
1/4 cup water
2 tablespoons rice vinegar
1 teaspoon soy sauce
1 tablespoon plus 1 teaspoon fresh lime juice
1/2 teaspoon salt
1 fresh red Thai bird chile, finely chopped or thinly sliced
1 garlic clove, finely chopped
