The best advice is to soak rice paper just till it starts bending.. Over soaking will create breaks and other thing I experienced is coating with just one sheet will make it more crispy and coating with 2 sheets will give chewy experience as the inside sheet doesn't get properly fried and also reduces the taste of stuffing.. For using only one sheet make sure you don't soak rice paper too much .. All the best😊

She used egg whites as glue. Then she wrapped the prepared ground pork, minced shrimp, carrots , minced black fungus , soften glass noodles cut up , scallions among other things as filling . Fried into very crunchy stable rolls. I'll have to search YT for her vlog. Unfortunately I did not have Sprite.😮

Another great dip is tzatziki made with Greek yogurt mixed with minced dill and mint, lemon or lime juice, some salt, and grated garlic. Labneh could also be used, instead of the yogurt. There’s no reason to stick with the oriental style dips or seasonings. For seasonings, I like using za’atar and sumac with pomegranate molasses, powdered loomi (dried Persian lime) with orange juice and zest and buckwheat honey. My dips (so far) are Indian-American and Greek. I’m thinking about making a tamarind-based dip next 😊

Yeah Rice paper is chewy... that why I didn't like I always use egg roll wrappers...and easier no need to soaked in water. It doesn't matter pan fried or air fryer it gonna chewy using rice paper
Thanks. I would suggest you to prepare the cooked filling 2-3 days in advance and store it covered in the refrigerator. The rice paper sheets must be prepared right before you eat.
hi.. in the video, you didnt show you putting oil on the dumplings in the air fryer yet they did not stick/look dry. so do we need to add oil? or did u skip that step, looks very good !

I used hot water and just dip it for like 5 seconds, or when it’s starts bending it’s good enough, don’t put to long or it’ll rip. But long enough to see it start bending.

@@thinkersonly1 hi Asian here, it's most likely because the rice paper you used was not 100% rice, but rather mixed with tapioca starch as is most of the brands outside of Vietnam. Tapioca starch when heated will turn sticky and melty, much like Brazilian tapioca crepes or manioc

When I use the air fryer, I use a cooking spray, to spray the bottom of the fryer, and a quick spray on top of the spring rolls. They come out really good.
Covering these with twice the rice paper will make them double chewy but I mean the type where every bite you could choke because of the gelatinous rubbery texture it was a big FAIL just get egg roll pastry dough sheets

I get as far as the frying, then they go soggy, never brown and get hole in…result? A big gloopy mess! Someone help please!
My rice paper is very chewy, i dont know why. And when i fry it , it breaks. And becomes soft by the time im finished frying them all
