For a party my missus fills em with cheese salad. That's two or three kinds of grated cheese with a bit of mayo and salt and pepper. Really nice. She has to make them smaller though 😊
I believe in the second recipe if you wish to make meatballs, the best meat would be pork. I mean, sage and pork do complement one another well. Plus, pork and cabbage also taste beautiful together.

My Yorkshire’s rise so beautifully and as soon as I take them out of the oven they deflate! 🙈 I’ve tried leaving them in the oven until the oven cools down, doesn’t work, opening the oven a very very small amount to allow the steam to escape, they still deflate. For the love of God how can I get my Yorkshires to stay up and not end up a soggy let down

Sivved flour first, then make a well in the flour and add the eggs and milk. Set your oven to high. Gradually incorporate these ingredients then start to whisk briskly until you get a fine batter. I'm a Yorkshire lass been doing this for years. Everyone loves my Yorkies. I use individual bun tins for this. Add a drop of oil in the individual compartments and place in oven for ten minutes. After add about a tablespoon and a half of the mixture to your tin. Place in oven for 25 minutes. Do not open the oven door before 25 minutes as your puddings may come out flat.
Im calling shenanigans on the oil in the muffin tin trick. Im supposed to measure a 1cm depth of oil in three of the cups NOT not use a measuring spoon for each cup???

Real yorkshire pudding was never in muffin tins and also we used drippings from the roast in a oven proof bowl, poured batter with a pinch of nutmeg. And you got real pudding on the bottum, not ful of air. And it was sliced like a pie. Just sayin.

Mashed, not roast potatoes? That's unusual! I'd be in serious trouble if I did mash instead of roast potatoes for a traditional roast dinner.
