Masterchef Wok Techniques: Traditional Steamed Egg with Salted Egg, Minced Pork, Tofu | Terry Cooks

  • Nice and simple easy side dish. Very little prep and not much effort involved. I'll teach you a simple dish that my grandmother of whom you've seen in my other videos cooks all the time. It's almost an everyday dish in my house hold and it doesn't take too much effort or time.

    Ingredients
    4 eggs
    2 salted eggs
    1 block tofu
    100-150g minced pork
    1 stalk green onions
    Sesame seed oil for garnish and flavour
    Directions:
    1) Break salted egg into mixing bowl and separate the salted egg yolk and keep for later.
    2) Break the rest of the eggs into the same bowl and mix.
    3) Chop tofu into cubes
    4) Slice salted egg yolks into halves.
    5) Use a wide stainless steel deep dish and spread out tofu onto dish with enough space.
    6) Roll minced pork into small balls and spread them out on the dish in between the tofu pieces.
    7) Do the same with the sliced salted egg yolk
    8) Pour water into a wok and heat to boil. Makesure to not put too much water. Just enough to be under the steaming tray.
    9) Once water is boiling, place the stainless steel deep dish onto the steaming tray.
    10) Pour egg mixture into the deep dish.
    11) Cover wok with a cloche and steam the dish for 15 - 20 mins.
    12) Remove dish from wok.
    13) Chop green onions finely and sprinkle on the steamed egg.
    14) Drizzle sesame seed oil for added flavour and scent.
    15) Serve with rice.
