I just made these and they turned out really good: 8 out of 10 The reduced balsamic vinegar is the star, but the fresh thyme comes through surprisingly strong and pairs with the strawberries nicely. Be sure to spread on enough goat cheese so that you taste it against the rest of the ingredients. If you don't have goat cheese, I'm thinking you can substitute cream cheese and it will work just fine. I reduced the recipe by 1/2 and the amounts were perfect.
I made this today and it came out great! I included blackberries, raspberries and kiwis in addition to the strawberries. I added some nonfat greek yogurt, olive oil and honey to the goat cheese spread. The balsamic reduction was divine. Everyone loved the delicious lunch.
I end up watching these at ridiculous hours and get so hungryy. Thank God I just had some tea and toast... Like that compares to my favourite cheese and strawberries.
I made this after watching your video. It is so delicious and so unique. I may try making it with ricotta cheese next time since not everyone in my family is a goat cheese lover. Thanks Chef John!
The balsamic vinaigrette is a dressing that you can put over salads&such. It's mixed with other ingredients like oil. The balsamic vinegar on the other hand is just straight up vinegar.
I want to eat this. It looks sooo good. I'm always looking for good appetizers. Is this something that could be made in advance and assembled just before eating?

We do have good strawberries but they're hard to find at the Grocery store. I think underripe strawberries are easier to transport without spoiling. I live in Northern California (I believe Chef John does as well) and good strawberries are typically found by the flat being sold on the side of the road. Or you can grow them yourself, we have great weather for it.

I love Italian bread, and who doesn't like strawberries? Is there any viable replacement ingredients for the cheese, or am I doomed to look on in envy as others somehow manage to enjoy cheese?
I tried this, and believe I reduced the vinegar too much (like 75%). In the end, the dish was alright, but with sourness very much overwhelming the sweetness. Perhaps it's just me, but I felt the need for something on top of the strawberries and oiled bread to even out the sourness that the goat cheese, vinegar reduction and the seasoning brings. Any hints on how to sweeten it up a little bit?

Cow cheese has not that penetrat taste like goat cheese. Goat cheese tastes like a goat smells. However, cow cheese tastes pretty neutral. There are many kinds that are very intense but they don't taste like a goat :). So do you know some other cheese I could take?
Not really. Its dryer than cream cheese; spreadable but with a bit of crumble to it. The flavor is totally different. Its got a really sharp tang that makes it pair really well with fruit. The sweetness helps balance out that tangy-ness really well. If you try it and you like it, Chef John also has a baked custard called a Clafouti that he made a video of that has blueberry and goat cheese. I've made it several times and I never bring home leftovers.
