Since many people don't understand how this ikejime technique works, allow me to explain... They first spike the brain of the fish which kills it, rendering it brain dead and unable to process any feeling. Then, they destroy the spinal nerve cord with the wire you see here. The disturbing movement you see in the fish is the 'knee jerk' type reaction from its nerves being broken. There should not be any feeling associated with this process as the fish is already dead from the brain spike. This technique was developed by Japanese fisherman to keep fish tasting fresher for longer, and to help eliminate fishy taste which comes from the buildup of chemicals in the nervous system of the fish. Once the nervous system is destroyed, it cannot excrete those chemicals.

"Ikejime (活け締め) or Ikijime (活き締め) is a method of killing fish which also maintains the quality of its meat. The technique originated in Japan, but is now in widespread use. It involves the insertion of a spike quickly and directly into the hindbrain, usually located slightly behind and above the eye, thereby causing immediate brain death. After spiking the brain, a thin needle or piece of wire is inserted into the spinal column to prevent any further muscle movement. When spiked correctly, the fish fins flare and the fish relaxes, immediately ceasing all motion. Destroying the brain and the spinal cord of the fish will prevent reflex action from happening; such muscle movements would otherwise consume adenosine triphosphate (ATP) in the muscle, and as a result produce lactic acid and ammonia, making the fish sour, soggy and less tasteful." Google is right there folks, but I'm happy to help :)

You then do this to preserve the quality of the flesh in the fish. The fish flops because he's hitting nerves as he runs the wire down the spinal cord of the fish. That's not a reaction to pain, it's a reaction to the nerves being touched by the wire. This is the opposite of cruel.

So anyone posting “what’s the point” “🤬” or “at least make sure the fish is dead”, read this. This is called Ikejime. It is an originally Japanese method of spiking (killing the fish with an incision between the eyes) the fish first, killing the fish in the most humane way possible. After that, a metal wire is placed through the spine in order to do a certain number of things. 1. It is believed to help prevent the buildup of stress hormones (lactic acid and more) 2. It gives access to a major vein in the fish which is used to bleed the fish. TL;DR: the fish is dead already… look up Ikejime
Also, dead things react to pain for a certain amount of time after being killed. It’s the reason you never let kids go near freshly dead snakes. For a cool demonstration of this you can look up snapping turtle heads because those things destroy anything it touches after being separated from the body.
They're not being abused when they remove the spine the nervous system in the dead fish goes crazy because they are so simple it's still active due to how fresh the meat is and it will shake around
Everyone needs to chill the fish is dead and they are draining blood. You think a live fish would be that still when you nearly cut its tail off and run a rod up its spine? The spasms you see are residue nerves firing. Its dead though-no pain

The way I have seen it is first you push the hollow spike in the brain. Then push the wire via hollow spike in the top of the backbone, as far as it will go and then cut the gills. the heart will pump blood out even the fish is dead. Then store it in a specific temp of ice and water mix. The fisherman gets more money from sushi restaurants, if the catch is treated this way. Don't knock it until you try it.

If you read what this technique actually is, this is very very humane and dignified way of killing a fish. The fish is then thoroughly bled and undergoes spinal cord destruction (shinkei jime) before getting iced down.

For those unaware; This is a method for destroying the spinal column and therefore ensuring the nervous system is completely shut down. With fish this is important to kill them quickly and properly as it causes less stress and therefore a higher quality harvest can be ensured. Alot of fishermen will allow fish to suffocate to death in iceboxes, this destroys the quality of the meat. Lactic acid buildups occur when animals thrash or undergo intense muscular exertion, in living animals this buildup of lactic acid is harmless and dissipates with rest. A dead animal cannot breakdown the acid in their muscles and as such, the meat tissue begins to decay at a faster rate. When the fish is killed immediately; and its spinal column destroyed, all nerves stop firing and muscles will cease twitching, if bled out properly this will ensure the most humane death and a hugher quality meal that preserves longer.😂

The fish is dead. A freshly dead fish still has reflexes and energy in its muscles and nerves, so threading a wire through its spine activates those path ways and it flinches.
Edit: I am using TH-cam’s translation so it may change some things vey slightly, but I just want to help give you a better understanding of how these things work.

All those comments condemning what they are doing, it is also called tethering which we also do when dressing a home kill, (cows) as it helps to maintain the quality of the meat by severing the spinal cord and all you are setting is the breakdown of the main nerve system. Ikejime/tethering is done after the initial kill, which goes back centuries.

@@Ladisingh9how is this cruelty? The fish has already been brain spiked which is the quickest most humane way to kill a fish. That's step one of this process.

1. It is believed to help prevent the buildup of stress hormones (lactic acid and more)
Id imagine the fish would start protesting either being out of the water or having it's tail chopped half off if it were alive.

Ike jime is a traditional Japanese slaughter technique that involves instantaneously euthanizing a fish by inserting a spike into its brain cavity. The fish is then thoroughly bled and undergoes spinal cord destruction (shinkei jime) before getting iced down.

“You like that? I seen your toes curl”
Less stress ?! The tail was cut before that. How this is less stressful than being killed instantly?!

Just cut under the gills and bleed the damn fish. This is overkill for a fish that is pretty much already dead
Who cares
Fish is already dead tethering helps to maintain the quality of the meat, the movement of the fish is due to the spinal cord being severed, we also do it to our cows. It's a very effective method that goes back centuries.
@@maccamac7986 I get the science, but unless you plan on eating the fish in the first 5 mins after catching it, the muscles will eventually settle. A cow sounds like a slightly different can of worms. I would think it would be more effective a for larger animal like that.
@@randy_magnum01 Put aside the justification of your thought, your emotions has allowed you to overthink what you have observed, an in this case size does not matter. What you have observed is the long term preservation of sustainability. For a lot of people unless they see the fillet of meat in a plastic wrap they are usually horrified by the actions of what is normal practice in the dispatch of an animal. In our culture the animal is respected and killed immediately and the tethering is for long term preservation. Take care

Fish enemas, do it all the time
@Michael Leon1 it breaks down the central nervous system and makes the fish as tender as possible. I believe it keeps the meat tender by helping to prevent the spread of stress hormones (like lactic acid) through the meat. Hope this helps!
