I may be crazy, and I'm no food scientist, but I would think that as the fish starts cooking, it firms up and pushes the potato starch, flour and egg mixture to the surface of the fish cake which creates the crust. If so, that's fascinating. I will definitely have to try this recipe.
i made this today! when i was blending the mixture it came out extremely mushy, i was scared maybe the water content was too much, so i mixed in some flour. I also found wetting your hands with oil was much better than water. It was delicous ! VERY soft inside :3 (i hope it was meant to be like that ) LOL Defs will make again ~ ^__^
I also encountered the same problem. I was thinking of the egg size that caused it to be mushier. But after adding more cornstarch, it came out perfectly fine ^_^
So you can use almost any types of fish? I really love Talipia. I think it would be really good with it :) I will try this as well. :) Cute puppy too he looked hungry in this one lol. Ive been watching your videos for awhile now, hes so well behaved.
Pollock is found in the Atlantic waters and I'm not sure if similar to tara. To me, tara is closer in Pacific black cod - gindara. The texture is the same. It is a popular fish amongst fish lovers in the West Coast.
Jakiladd Satsuma-age is a specialty dish in Satsuma region, Kagoshima Prefecture :) I didn't know satsuma is a type of citrus in England. Interesting! en.wikipedia.org/wiki/Satsuma_age
The fruits are called Satsuma because that's where they were first found, in the Satsuma Province in Japan, probabily is the same with the fish but not 100% sure.
