    Hi everyone, welcome to Souped Up Recipes. Today we are making a popular street food in China. Ma La Tang. Mala means numbing and spicy. Tang means to boil or blanch. Basically, it is a bunch of different ingredients cooked in a spicy and numbing soup base. In this video, I will show you everything, including how to make the broth, how to make the spicy and numbing flavor base, and I will also give you a non-spicy version for the people who can’t handle spicy food.

    INGREDIENTS FOR THE BROTH
    2.5 lb of pork bones
    2.5 lb of beef bones
    1.5 lb of chicken bones
    8 liters of water

    INGREDIENTS FOR THE SPICY AND NUMBING FLAVOR BASE
    1 cups of beef fat
    2 cups of vegetable oil
    1/3 cup of paprika (Amazon Link - geni.us/k19xa)
    1/3 cup of mild chili powder (Amazon Link - geni.us/03nan)
    2 tbsp of cayenne (Amazon Link - geni.us/wb2A)
    1 piece of cinnamon stick (Amazon Link - geni.us/lEnFc)
    1/2 tsp of fennel seeds (Amazon Link - geni.us/B53SUzM)
    1 tbsp of Sichuan peppercorns (Amazon Link - geni.us/7Ilh)

    5-6 pieces of star anise, blend 1 piece and save the rest for garnish (Amazon Link - geni.us/QBjg3D6)

    1/2 cup of Chinese cooking wine to wet the chili powder and the spice mix (Amazon Link - geni.us/UUbb)
    4 pieces of pickled chilies
    1/3 cup of Douban Jiang (Amazon Link - geni.us/NtAFZ)

    1/3 cup of fermented sweet rice
    15-20 cloves of garlic
    45 grams of ginger
    salt to taste (I used 2.5 tbsp)

    INGREDIENTS TOASSAMBLE MA LA TANG
    Thinly sliced beef
    Beef tripe
    Shiitake mushrooms
    Fried tofu puffs
    Lettuce
    Baby bok choy
    Beef meatballs
    Fu Zhou style fish meatballs
    Fried fish cake
    Taiwan style sausage
    Sweet potato noodles
    The spicy and numbing flavor base
    The bone broth that we made before
    Salt to taste
    Diced garlic (for the non-spicy Ma La Tang)
    Diced scallion
    Toasted sesame seeds (for the non-spicy Ma La Tang)
    Hot oil (for the non-spicy Ma La Tang)

    I will be honest that I will never make this recipe, however I still appreciate all the detail you go into the reasoning behind each ingredient as well as substitutions. You are an amazing teacher and the malatang looks so delicious!!!

    I like how you always assuage my fears when I worry about finding ingredients, you are honestly one of the best teachers out there. I was just thinking about not being able to find the dried galangal and dried sand ginger, and I was like oh no without this the dish might be ruined..." but then you said "It's okay to skip a few, don't worry you're not gonna ruin the dish!" lol

    I'm new to the channel so that might explain this, but this was one of the first times I've ever seen a recipe where I had not heard of the large majority of the ingredients. It made me realize just how much is out there that I haven't seen. Can't wait to try this if I can.

    Wow ma la tang used to be my favourite before moving out of China. I cook it sometime too! But I miss the ingredients which I can’t get here in New Zealand 🇳🇿 like fresh lotus roots, certain types of mushroom and greens 🤣

    I recently ate at a hot pot place with the mala broth. It was the most delicious soup and possible food I’ve ever had. Now I see why with the insane amount of ingredients and preparation. For a while I’ve been gathering spices for Chinese cooking but I’ve never heard of galangal and sand ginger. I probably won’t by that unless I get big on hotpot but maybe one day I’ll try this recipe

    Ahh ma la tang was my favourite treat when I lived in Beijing. My work colleagues introduced me to a dong bei ma la tang house, the non spicy still had some spice but also had the sesame paste in it. I wish I could snap my fingers and go back for another bowl. So delicious!

    I don't think I'll actually be able to make this (I keep kosher, so I don't eat pork and can't use most of the prefab ingredients), but it was really interesting, and I may adapt the techniques. (I make a killer totally-kosher Pho, and figured out how to make awesome Vietnamese-style beef balls.) Also, learning the Chinese names of the ingredients will help me the next time I go to the Asian market. Teaching myself to read pinyin was an excellent investment of time. Thank you!

    I live in Alaska and love spicy foods especially during winter time because its so cold out. I ate a Mala Hot Pot in San Antonio Texas and loved it. I will definitely make this recipe and let you know how it turns out. I heard its also called the kitchen sink recipe, looking at the long list of spices I can understand why now. The flavors I'm sure will be fantastic. Life is not worth living if you don't have flavor and spice. Keep up the great work. Thank you for sharing this recipe its hard to find.

    The only thing this is missing from my personal hot pot recipe is cumin seeds. I like to add nappa cabbage, enoki and king oyster mushrooms as toppings but the base is almost identical. Your husband is eating GOOOOOD!

    The Chinese licorice!!!! I've been trying to figure out what it was for so long. My coworker when I lived in China gave me some when I was feeling a little under the weather, but she couldn't figure out what it was called in English but that licorice looks quite like it!!!
    Also I love the video and one day hope to recreate this recipe at home!

    this looks so delecious! it was my absolute favorite dish during my time in china. i remember that in some restaurants they added some kind of sesame paste / tahine to the soup, together with the oil and garlic. do you know what kind of paste they are using?

    When I had this the first time a a local Sichuan restaurant I was very surprised at all the oil. Now I understand. It was delicious. Since it is a place that caters to Chinese expats it has things like pig ears and intestine on the menu. I'm thinking the next time I get hot pot there I will ask if they can put one piece of intestine on my order just to give it a try.

    When I was in Beijing I went to a malatang place that served me a malatang with a very thick sesame sauce. All of the soup ingredients were swimming in the thick sesame sauce. It was really delicious, my favorite of all I've tried. I've tried to find a recipe for this "sesame base" malatang but can't find one anywhere. Does this sound familiar to you? Is this just a Beijing variation or is this type of malatang eaten in Sichuan as well? If you could do a video presenting this sesame malatang I would really appreciate it, or even if you could just reply to me here giving me some tips on how I would go about making it. Xiexie!

    It would be so great if there was a way for you to link to a full list per recipe of ingredients from amazon. Like, you click the link and it adds all the ingredients to your shopping cart at once (except for meats). That way I can make sure to buy all the right spices!

    One thing about this fish is that ingredients and the maps base can be so expensive that it is actually cheaper to buy it from a restaurant than cook it yourself
