I’ve been making a variant of your beef salad, here in the UK but fresh ingredients like lime leaves and lemongrass are pretty non existent. But a sauce of lime juice, fish sauce, dark brown sugar as a marinade for the BEST beef, with a rocket salad, coriander ( cilantro to you! ) fresh chillies and toasted peanut. Yum. I think my variant is more Thai than Vietnamese. I’ll be trying some of your other dishes, or variants thereof, shortly.
Your variation sounds absolutely delicious! The one I made is a Cambodian style one. I will be making a Thai version in the future. Thank you so much for watching 🙏🏼

Lucky if we can get coconut milk and chillies! Sometimes, not often, coriander. The nearest proper supermarket , Tesco, ( boo) is a round trip of 50 miles! Sainsbury? No idea! I’m not sure if it operates ooop north. But being here has its pluses, believe me. If you seen any of the tv coverage of the 6 ft 6 Shepherdess with 8 children, we are just round the corner from her farm. Enough. Thanks for the tip. I’ll continue to improvise I think. Stay safe…..

Yummy! I've never seen anyone use mung bean noodles or dip with Khmer hot pot. Yum! I've had a Thai version with dip, and it was amazing! Never had it with mushrooms either, but sounds like a winner to me! Are you Thai and Cambodian?

Is there a local Asian grocery store nearby? You can find most of these items there. Amazon also carries these electric pots and induction stoves. It can be used for cooking other things too.
Lotus Root is crisp and crunchy. Even after boiling for 20 min, it will still be crunchy but it is definitely cooked. It's supposed to be like that. You didn't undercook it 😊

I love enoki mushroom in hotpot. Glass Noodles (bean thread noodles) are also my favorite kind of noodles to throw in too 😁

Check Sainsburys! I've had great luck finding Lime Leaf and Lemongrass with them. They even have Galangal.

What is lotus root texture like? I cooked it once and it was similar to a firm carrot. Did I under cook it? I cooked it for 20 min.
