A test of patience・Making milk jam 🥛 Three flavours: milky, Earl Grey 🫖 matcha 🍵

    Hullo!
    It’s been a while, so I thought it was time for an update! November passed by in a haze. I was so busy with school and NaNoWriMo there was little time for anything else. The run-up before Christmas is also such a busy time, but hopefully I’ll be able to upload a video or two before the year is over 😸

    🥛Milk jam🥛
    In the video I made a full batch of milk jam, but divided it into thirds to test the different flavours. The amount of flavourings in the recipe below is for flavouring a full batch, while in the video it was to flavour a third of a batch.
    ・Ingredients・
    「Milk base」
    5 dl milk (3% fat) OR 2.5 dl milk (3% fat) and 2.5 dl whipping cream (36-40% fat)
    80-90 g sugar
    「Tea flavour」
    1 tea bag OR 4-5 g loose leaf tea of choice (I used Earl Grey)
    120-150 ml hot water
    「Matcha flavour」
    3 g matcha powder
    ・Method・
    「For the milk jam base」
    Add milk (or milk and cream) and sugar in a pot. Heat until almost boiling then let simmer on low to medium-low until thickened somewhat, 30-45 minutes. Milk burns easily so make sure to keep stirring.
    「For tea flavour」
    Let the tea steep for 5 minutes. Add to the milk jam base and mix thoroughly. If it seems the mixture has become too runny, simmer a little more over low heat.
    「For matcha flavour」
    Add the matcha powder to the milk jam base and mix thoroughly. Optionally, dissolve it first in some warm water.
    I’m still trying to figure out how best to enjoy the milk jam, but spreading it on slices of baguette was pretty nice!
