      Like the others said if it's your first attempts you will fail. I failed to big time but I was so determined to do it right. It took me 3 months (i did only weekends) to have the perfect chocolate croissants with the layers and bubbles etc

    Actually, butter doesn't release CO2; the water content in butter evaporates to steam during baking, and this causes the layers to separate, creating the flakiness.

    It's not a "croissant". It's a "pain au chocolat". Their is a huge difference between those two recipes.

      hassane LAHLOU it is a a type of croissant tho. A pain au chocolat is made the same way we’d make a regular croissant, just with some modifications made to add chocolate in it

    I made these and although they were a lot of work it wasn't necessarily hard. I do recommend to attempt them and it is very important to keep the butter cold.

    “The butter will melt and creates CO2”??? Some chemistry went wrong here??? It’s the yeast that break down the sugar generating CO2, not the butter.

      Goku More than 80% of butter is fat, and the majority rest of the content is water. There are some vitamins in butter but the sugar content is likely close to 0. Therefore, butter don’t break down with the presence of yeast.

    She overused the word “really cold” so much in the previous video that I ended up freezing my dough that made it tear up from so many different places 😭 it didn’t turn out great but hey it’s bread and chocolate! How bad could it possibly be 🤷🏻‍♀️
    Point is, don’t freeze your dough if you’re dumb like me. Just chill it in the refrigerator

      It's fine to freeze it but just let it rest a bit but if you live in a hot place the outside will be really soft while the inside is still hard which makes the tearing worse

    I love baking and love eating croissants, making one would make me so happy. Sadly, I live in a very hot country and don't have AC at my house so the butter would pretty much melt instantly. Though I'm hoping that once I move to the US and have my own kitchen I can make this! I wanna have a big kitchen for all my cooking and baking! 😁

    Made this and Puff Pastry Dough for Beginning Baking Culinary class and I just kept hearing her voice to keep it cold lmao. Made the Croissant dough in about 3 1/2 hours though. We do have a Sheeter for the dough but that probably only really shaved off about an hour's worth of work trying to get it the proper size.

      When laminating dough, if the dough is hard to roll out cover it and let it rest in the fridge for 30mins. It makes a massive difference with that added time for the gluten to relax

    Well, your butter and dough did not mixed well, thats why you got that dense bread intead of those tiny layers, also you have to work your dough a little bit more so you develop some of the gluten and you avoid those lumps, try it and they will look amazing

    made these in a scratch bakery, back in the 90's , regular or plain , chocolate , ham and swiss or chedder. all awesome as hell. but we had warm butter, and a rolling machine. for the most part. still love baking. just don't do it enough now.

    3:25 the butter melting doesn’t produce carbon dioxide, it’s through the yeast through anaerobic respiration which produces the carbon dioxide causing the bread to rise

    3:30 it's the water in the dough that evaporates pushing the layers up. The butter melts and you are left with pockets of air. The yeast is creating CO2
