honestly im a home baker and compared to macrons, I dont think they're that bad. I used a recipe from laura vitale and got them right the first time over a weekend and have made them 4 or 5 times since. However, macrons are so hard. I've tried them 3 times and have never gotten them right so i have given up. plus, croissants actually taste good unlike macrons.
Croissants and Macarons are hard to do. It's just that, Macarons uses expensive ingredients that's why mistake is not an option while Croissants, it's cheap. You can do it many times you want.

I understand its your opinion and I'm not hating im just trying to say why they wouldn't look at a recipe or video. Also cooking in the past never required you to understand scientific law so I don't get the reason why not looking at a recipe or video you'll defy science. Also nothing in this video states she trying to defy science. She's just trying to find a way to get the pastry to rise and create the layers in her way and by learning through her mistake.
