I'm over 60 years old grew up in SE Texas and have made beans this way my whole life. I have a suggestion though. If you will wait to add your salt until the last 30 or 45 minutes they will naturally soften to where you get the texture you want just by cooking and maybe mashing a few against the side of the bowl just for fun. By adding salt at the beginning you increase the boiling point of the water, and you make it difficult for the beans to soften, which is why you are pulling some out and mashing them in a bowl. Having a lower boiling point causes the beans to roll, which helps soften them.

West Coast resident for my whole life, and man...Southern hospitality ain't no joke. Make some buttery crusty biscuits (U.S.) and some southern style fried chicken (buttermilk deep fried preferably) to go alone with it. If you like sweet tea, that's also normal.
The beans look PERFECT, AB. I always add a little less water; 4 1/2 to 5 cups. That way I don’t have to smash my beans for creaminess. One less extra step. I’m lazy! 🤣 I learned from my Creole grandmother. She also added a little butter at the end. God bless, and love your channel.

The Trinity plus carrots is called the Mirepoix in French. My grandma was from France. She had a bunch of Cajun French friends and it to make me smile when she talked to the Cajuns in French. Anyhow, Cajun/Creole food is the best from African recipes mixed with the best of French recipes. Absolute magic. She would joke that the Cajuns would call it 'Mirrowquauy'. Same delicious combo. Keep cooking good food bro.
Almost. The Trinity MINUS Pepper Plus Carrot is Mirepoix. The French dont use green pepper at all in their veggie base for soups and stews. The legend is that when the French came to Louisiana, peppers were much abundant and easy to grow here, and in-turn it quickly became a replacement for carrots in their mirepoix. Hence, the trinity was born.
Excellent video. I like that you cook the sausage separately, and then add it back at the end. Lots of other cooks leave the sausage in the whole time. Since Andouille sausage usually comes fully cooked in the package, I don't want it sitting in the pot for a couple hours. I do put in a ham hock, just because the meat on the hock is the tastiest part of the pig. To mash up some beans to release starch, some people just smash them against the side of the pot. I like to use a potato masher right in the pan. I don't know if it is traditional, but most recipes call for a little cumin, which I personally like. Keep up the good work!
When I had to “fill in cook” at my restaurant on Mondays, I made a ‘hurry up’ beans and rice; this looks way better, can’t wait to try it. BTW, we Calle onion, celery and green peppers the Cajun Trinity and onions, celery, and carrots (Mirepoix) the French Trinity.
I spent almost 20 years in Houston, and through some friends from La. was introduced to Cajun. I now own a restaurant in Iowa, and will be using this recipe for our weekly special! I haven’t tried it yet, but by the ingredients I can tell it’s gonna be great! Thank you.
As a girl who was born and raised in Ohio; I am doing my best to learn southern dishes to cook since moving to Louisiana, I really thank you for this recipe, I’m currently cooking my first pot of red beans right now
Great video. Reminds me of my mom who taught me how to cook beans on Mondays after school. She passed away almost 18 years now and I still cook this on Mondays from time to time while I do my laundry. Thought about her and decided to check out some of these videos to see if someone had similar methods. Thanks for a reminder of her, it made me smile. Something I do when you bring out some beans to mash them, I will hit them in a blender real quick to make it a little thicker. Then make you some crawfish cornbread, oh yeah! Thanks again brotha man!
🙌🏽. Any reason she made them on Monday’s? Is it because it’s an easy prep, just throw it in the pot meal? I’m a new mom and trying to get a plan going for dinner each week.
@@RickyandGandi My grandmothers from NOLA would cook these on mondays because that’s when a lot of people would do their laundry. You’d hear the term “Wash Mondays” a lot when I was a kid growing up. So you could put the beans on cooking all day while you attend to laundry and other things. So yeah you can do this whenever you need to get a lot done and still want to get a hot meal on the table for everyone. If you want to make it even easier, buy some pre chopped trinity and use the brand Blue Runner beans (We always called them cheat beans). You would only need to cut the sausage up at that point and you can get a great tasting meal pretty quickly. Hope this helps.
Thanks for the tip on soaking the beans for one hour in a pot with the lid, off the burner, in boiling water & it's just like soaking over night. Who else knew???😁
My husband and I were first introduced to red beans and rice while he was in college in Baton Rouge in the mid 80s. We are Yankees from Wisconsin and had NEVER heard of it. We ate it while living there for 4 years and sort of forgot about it (sorry). I saw this video and decided it was time to resurrect it. WOW!!! Can’t believe we wasted the last 40 years without it! Amazing recipe! Thanks AB!
I had a taste for some red beans and rice so I had to stop by. Im cooking it as we speak and I did everything you said except one thing and that was I added a lil Tony's Chachere's Creole seasoning. Thanks for the recipe. It was actually easier then I thought. Stay blessed

My family loved this so much. I had some leftover cooked smoked turkey from Thanksgiving in my freezer so I went ahead and threw it in the crockpot as well. Fantastic!!!!
I loved how you browned your sausage in the beginning, but then left it out till the last 15 min. of cook time!! This keeps your sausage nice and juicy, versus how it can get dried out when people cook it with the beans for hours.. EXCELLENT Recipe, AB!! ❤💋

My mom had been making this for years and didn’t know what to call it and I didn’t know what to call it when I made it, and come to find out it’s just as simple and nice as it is to make! Red beans and rice 🍛
Loved it. When I tell you it was fire, it was FIRE! Water works just fine. I always used stock but water is perfect as it doesn’t over power the beans!!

I just made this. I used 8 cloves of garlic, Jalapeno sausage, poblanos instead of green bell pepper, because that's what I had, also smoked bacon instead of ham, again that's what I had, also 8 shakes of Louisiana hot sauce. Yes, mirepoix. I use it all of the time.
I personally use jalapeños in place of the bellpepper, with the celery and onion, and have coined that mix the Texas Trinity 🤣
@@brittanymiller8490 ❤ Texas Trinity
I spent almost 20 years in Houston, and through some friends from La. was introduced to Cajun. I now own a restaurant in Iowa, and will be using this recipe for our weekly special! I haven’t tried it yet, but by the ingredients I can tell it’s gonna be great! Thank you.
Where’s your restaurant?
How did that weekly special go? Did you enjoy it.
Gonna say they don’t really have a restaurant, wouldn’t be telling the world what secret recipe is! Not a smart move if he actually owns a restaurant
I’m from the south , and this right here is a staple , every since I move to philly area , can’t even find food like this , thank god for this video
Thank you. My 6 year old son and I made this together (he was standing on his chair in the kitchen) Making memories :)
As a girl who was born and raised in Ohio; I am doing my best to learn southern dishes to cook since moving to Louisiana, I really thank you for this recipe, I’m currently cooking my first pot of red beans right now
Down in Ohio (the 11 year old son)
Great video. Reminds me of my mom who taught me how to cook beans on Mondays after school. She passed away almost 18 years now and I still cook this on Mondays from time to time while I do my laundry. Thought about her and decided to check out some of these videos to see if someone had similar methods. Thanks for a reminder of her, it made me smile. Something I do when you bring out some beans to mash them, I will hit them in a blender real quick to make it a little thicker. Then make you some crawfish cornbread, oh yeah! Thanks again brotha man!
😊😊😊
😁👍
Just made this late at night. When I woke up in the morning, it was great because all the flavors/seasoning had mingled and mixed together. Great recipe!
At least 19 people don’t know what good food is! I’ll be makin this very soon. Between you and The Cajun Ninjas videos, I’m becoming a really good cook.
My family loved this so much. I had some leftover cooked smoked turkey from Thanksgiving in my freezer so I went ahead and threw it in the crockpot as well. Fantastic!!!!
I recently moved to Louisiana from up north and this has become an absolute staple for me. The best part is it’s super cheap.
I watch a lot of cooking videos, and this rates very high in quality-both of the food, and the quality as a show.
I made this last night and my husband absolutely loved it. This was a great meal! Thanks 😊
Glad you and your hubby liked it!! Thank you for trying :)
We Love Red Beans and Rice Can't Wait To Make This Thanks Ab.
Enjoy!
Onion, celery, bell pepper and carrots are called a Mirepoix. This recipe is 🔥🔥🔥!
Ding ding ding! Pay the lady :) Correct Vickie!
😲 right!!! Where are you from Sis im from ****** near Shreveport
. actual she wrong.lol😂 mirepoix is carrots, onions and celery. Creole cooking you switch out carrots for bell pepper
Marcus Stanford I stand corrected!
@UC7GntbrvH8xdWjrcR_0Dtaw you are correct . i thought it was called trinity but wasn't for sure. Thank you
I loved how you browned your sausage in the beginning, but then left it out till the last 15 min. of cook time!! This keeps your sausage nice and juicy, versus how it can get dried out when people cook it with the beans for hours.. EXCELLENT Recipe, AB!! ❤💋
I just moved to NO and I’m been hearing about red beans and rice mondays. I’m gonna try your recipe. Looks awesome.
I just used some canned red beans, but I found that even just using your spice mix improved the flavor tremendously. Thank you.
I made this today and we love it. Especially the method of smashing a few at the end for the consistence of your liking is amazing
I made this in an Instant Pot tonight and it was great! 4 cups water is about right for pressure cooking. I doubled the cayenne.
i still used 6 cups, for t he simmer part what did you do?
Fell in love with cooking 2 years ago trying to raise money for my daughter birthday after losing my job and your videos have been so informative I wish I came across your channel when I first started make things really easy no extra long videos with confusing info
Ive made this version many times on Wash Day Monday and all I hear is what ever you’re cooking smells great.
Man that is one of the most filling, satisfying and just downright good meals. It's begging for some cornbread though.
Agreed 100% lil side of cornbread .
#LouisianaGirlHere: Your beans will cream if you cook them medium/Low for about 4 hours! Yes I know everybody does not have that kind of time, just know a Crockpot is an awesome tool for beans when time is a issue!
Wish I would have seen this before I started making mine. It’s dinner time and they are watery as hell
Yes!! Crock Pot is the best for beans.
Yup after about 3 hours it's when they start to cream by themselves, learned that the 2nd time making it
His way is a good concept but the key to creamy beans is the water level over the beans "Not to much water" and cook it down !!!!
So how long should I cook the beans down in the Crock-Pot?
My mom had been making this for years and didn’t know what to call it and I didn’t know what to call it when I made it, and come to find out it’s just as simple and nice as it is to make! Red beans and rice 🍛
Loved it. When I tell you it was fire, it was FIRE!
Water works just fine. I always used stock but water is perfect as it doesn’t over power the beans!!
Revisiting this video again, two months later because yum! My grandfather never wrote down his recipes and hated kids in the kitchen. 🤣 So by knowing my grandpa’s seasoning profile and learning your techniques I’ve been able to get it so close! I’m trying this with chicken stock this time to see if that’s the ticket.
Thank you so much! You’re straight to the point, no flourishes, no fluff. Right down to business and I’m here for it!
I also tried your fried cabbage recipe too! It took me right back to my childhood. Very thankful to have found your channel.
My husband lived in LA for a few years and ima be surprising him tomorrow with this 🥰 thanks for being easy to watch
Edit: turned out fabulous. Added some Tony's and red pepper flakes too 🥰
Gotta have the Tony's! I add Tony's into everything weather it calls for it or not! Lol
That's what I did 2with mine lmao
What is Tony’s
@@kaoe145 it's a Cajun/Creole spice. You can find it in your spice aisle. Comes in a green shaker can.
Red beans and rice is my husband’s favorite meal. I’ve been reluctant to try it in case I didn’t do it justice. We used this recipe last night, and it was great! So glad we found this video and channel! My husband says, “highly recommend!” 😋
Just made this today, AB. Wonderful recipe with the perfectly clear instructions. Feel more like a man preparing a meal this good and lasting for my family. Deeply appreciate it, king. I binge-watch your channel

Yup this is the way my big momma used to cook them. She from Rome ga and born in 1900 so she knew this style from age 10. Lordy them lookin good brotherman❤
Trying this out today! Will report back on how it goes, thanks so much for sharing. I also love your accent, it's so comforting.
Made this a few days ago, added a cubed up ham steak at the end of the cook to make it extra meaty. This is unbelieveably awesome!!! He's right you gotta make this!!!
I’ve been studying this recipe for a week. I’m proud to say I’m making it now and so far it’s turning out so tasty! 🍛
That heads up with the bean mashing was a nice tip! I've only made this once before, but I'm still teaching myself Cajun & Creole cooking. I'm using a pork shank this time. About to cook this up tomorrow.
The best. Great instruction. Was raised in Southside VA. Soul food there not as spicy as Cajun, and no garlic, but essentially the same. Love it all. Tnks for “bringing us home”!
Hi! I’m a Puerto Rican living in Houston. I’m excited with this recipe!!! Right now I’m doing it and followed all the instructions. The beans started to boil 😍 thank you!!! Blessings!🙏🏼🇵🇷
AB, as a single guy living alone I just want to say yours is the best of the cooking channels I've found. Your recipes are delicious and easy for a non-cook like myself who just wants to have variety. Especially because it's "guy" food. Thank you!
Rice and beans a Staple in any house🤗 love it
Great cooks think alike! :)
Love u
Awwww looking good. A meal 4 this week. Tuh-day I made neckbones. Falling off the bone. I used the broth and made my rice ..
You showing out Sori! That sounds so good. Mmmmmm
Yum!
So just had neck bone and rice? Like without cabbage, greens or Lima beans etc? Never heard of this. What state are you from?
@@tarapickedthepeppers1887 I always only have nevkbones and rice. I'm from Baltimore
@@wanda01141 😂😂Cooked down in onions over rice. Hell yea!. Sometimes cabbage or collard greens. Sometimes not.
My brother in-law made this a couple of days ago! I have been obsessed since. The BEST I’ve ever had!!! 🎉
Red Beans and Rice is in my top 3 all-time favorite dishes ever! Thanks you for sharing!
I fixed this recipe for dinner yesterday , and we loved it ! Easy , breezy , and delicious ! Thanks for sharing ,
Yw 😁🤤👏
I definitely made these beans, and I just wanted to say that they are everything you said they are. They were totally delicious. I made some home made butter biscuits, Oh my God, talking about delicious they were on point! I chose yours because of the seasonings that you were using I added just a half spoon of creole flavoring and it made it soooooooo good, thank you
I’m making this today,I don’t care how hot it is today I’m making this. I’m adding some okra and shrimp to mine, and yours looks too amazing brother.
Did you make it
@@Rudydarknlovely I had to add this to the menu now along with Gumbo. Kids fell in love
When I was broke I used to buy the boxed zatarains red beans and rice all the time. Now I have to try this real recipe . God bless you sir
Thank you! I just made this. I’ve been living in the SF Bay for almost 10yrs. I grew up in Houston and have been desperately missing my red beans and rice. You just made me feel at home with this.
I love these recipes! You can really cook.
I wonder if you can please give us a long story time about how you started cooking. I'm interested in hearing your story for real.
THAT LOOKS REALLY GOOD ! I'm from New Orleans so I'm loving this recipe. Thank you AB !!
You are so welcome Patrice. I f you approve then I know it's good :)
I’m from Cali! Bruh I don’t know which one is better- the accent or the food ✊🏾☀️
Women love a man who can cook!!!
Lol. Both!
Yeah ya right AB; you never miss. I'm a New Orleans native and this is the Monday special.
Yassss I cooked this for my Family, and when i say they complement me throughout the week and ask me when will I be cook it again oh my God, they loved it., I'm from chicago where they are always hungry in my area. Now I serve bowls of this greatness. Thank you for your awesome Skills it helped me a-lot I am here for it all! ❤️🔥
I love this recipe. Make this every few months ever since I found it. Also, since I'm a bit of a lazy cook, instead of smashing the beans and veggies down I just toss everything in a blender and pulse it a bit to make that slurry to thicken it all up.
I’m about to make this for the third time 😅😂 it has me in a hold. My mom been telling me about your channel since last year, I just begun following earlier this year though. Your recipes are always clutch! You and a few others are my go to cooks for great recipes. Thank you!

Your making me hungry. I lived in New Orleans for 7years and learned how to cook several of the dishes. Yummy 😋. Thanks
I'm making this today. Great recipe and yes it needs the green onion garnish for that oniony crunch. The best bean dish of all, Louis Armstrong knew his stuff.
I just made this. I used 8 cloves of garlic, Jalapeno sausage, poblanos instead of green bell pepper, because that's what I had, also smoked bacon instead of ham, again that's what I had, also 8 shakes of Louisiana hot sauce. ThE BEST EVER! Thank you Chef for teaching me to cook this amazing recipe!
