Yes, I started to say, it depends on how the products are prepared, but y'all beat me to it. There are non-pork-based gelatines out there, look for vegan or vegetarian versions. Pectin is very present in fruits, and can stand in to make things gelatinous without animal products at all. And gelatin can be made from halal sources, as well.

It is rare for sushi rice to use mirin. I have yet to be in a restaurant that uses mirin in sushi rice, and I don't use it when making suchi rice either. Most use rice wine vinegar or sushi vinegar (which is a sweeter rice wine vinegar that has sugar added) and once an alcohol has turned into a vinegar it is halal (Hanbali). There is even a hadith of Prophet Muhammad SAW saying "What a good food vinegar is" Sahih Muslim 2051, At-Tirmidhi 1840

All of these foods have various halal options, and generalizing can make Islam look unrealistically difficult for people considering Islam (i say this as a covert).
There are many halal gelatin for gummy bears, marshmallows, and jello. You can call a sushi place ahead as there are many that don't use mirin. There are also soooo many halal ramen options.
Please let's not make Islam look like it's full of prohibitions when there are halal options for all these.

If the noodles are like other brand of noodles then it's not really haram
For example here's some noodle brands that are halal to eat
    Maggi,Samyang ramyun,koka noodles.

gelatine can be derive from cow, sheep, some even chicken and have vegetable gelatine/agar-agar
but i will choose to not buy snack/food that contain gelatine if it not have halal mark or the ingredient list not write that it is agar-agar/vegetable gelatine
it can be cow, sheep, chicken gelatine but in non majority muslim country it can be derive from pork bone
