This game was an absolute staple for me during high school and playing it for over 1,000 hours, I’ve found all of its quirks. It’s possible to have Chumbucket hit you with the car when recalling it, to which Max will scold him and he’ll apologise profusely. Chumbucket will also rarely comment on it if you enter the Magnum Opus through the wrong door too often, asking if you’re testing him. You can also find the corpses of Gordon Freeman, Rico Rodriguez, and Ash Williams around the wasteland if you look hard enough.
It's way less "secret" than this stuff, but for my money some of the funniest lines in the game come from the War Criers if you leave them alive while killing everyone else. They just hang there spinning in place, saying stuff like "Uhh...hey man, you know I didn't mean any of that, right?" 😂
If you leave the Warcriers alive and hang out with them they have little sheepish dialog where they're like "So... you need a screamer? I'm free and really good at it."
