Biggest issue is HIPAA violations (that they say that they can legally do, but idk ive seen arguments for either side) of them selling private health data. They've hired unlicensed therapists, used/stolen info from unrelated therapists as if they were with better help, force any therapists they work with into very bad unfair contracts, paired very unfitting therapist to patient needs/concerns and makes it tough for the patients to do anything about it, makes it very tough for patients to quit - in a very manipulative way taking advantage of the situation, etc. All very scummy stuff from a company that wants to "help" people with mental health problems.

The main difference (I think) is that focaccia has a lot of different styles, the most famous one being from Genoa, tall and fluffy. Schiacciata, on the other hand, looks like a pressed down focaccia, very crunchy and not that tall, hence the name (="flattened").

I’ve been to the original All’antico vinaio in Florence and they definitely stack more compared to NYC from what I can see here. Also, I believe the veggies used in the Inferno sandwich are usually eggplant, but I did add zucchini on mine; happy to see Alvin did the same :)

You could support their other sponsors. But if you're frugal, then yes, viewer retention is very important (that's why most videos are over 10 minutes long). That means watching the full thing through! Sharing does also help. I don't know the specifics of the sponsor they booted, but how is supporting a gambling platform any different than advertising liquor or wine clubs? Alcoholism is arguably more harmful and addictive than gambling (at least physiologically) but no one bats an eye when he mixes a cocktail during a sponsored bit.

Also, gambling is more short-term harmful than alcohol, as the dopamine fixes can cause you to waste all of your money - that could also be part of the outcry. At least with alcohol, there's an expectation to drink responsibly and he presents it in terms of a "once in a while" fancy pairing for the food he makes - which is different than promoting gambling, especially if it's an app you can plug and play at any time that's available to everyone of all ages.
Favorite from when I was in Florence was the Dante. Don't know how to make the truffle cream so when I was making it at home I used a truffle infused burrata for the stracciatella.

If you were to put your hand into/onto it and the temperature was about the same as your hand, then it is lukewarm. Because you used a wet rub for your porchetta, the skin didn´t puff up as wanted.... it´s important that the skin puffs up for better texture and so it´s easier to cut it with a serated knife
