Would you recommend peeling the skin off the meat and get that separation beforehand before your dry brine? You can get some salt under the skin and not risk it ripping as much maybe? Just an order of operations thing but I dont know if it would have the same effect.
I eat that cut of lamb all the time. Get it from costco. It is fantastically juicy and tender. Try it with a rosemary and thyme pesto salt black pepper, garlic olive oil. Delicious!!!
