I used to cook at a country club so I was always the designated “carver” for gatherings. Jokes on them because I was a pastry chef lol and had never had to carve a turkey for my job. I did carve roast beef and one time I did a MASSIVE “steamship cut” (150-200lb chunk of beef) for our buffet events but never a turkey! At least I know now. Absolutely love this channel.

You make it look so easy. Mine looks like a ten year old did it. One Thanksgiving dinner, we asked a cleaning lady to help in the kitchen. We had 40 people over. I made the mistake of asking her if she knew how to carve the the turkey. She said yes. Our jaws hit the floor watching her rip the turkey bare handed into pieces. Live and learn!!

John, this was one of the best videos at carving a bird. I’ve always hated the thighs (hardest part) and I’ve never seen this technique of removing the bone before you slice them. Brilliant! Love your videos!

In regards to your biscuit recipe, once they are baked and cooled, how long will they keep for? Should I store them in a ziplock bag or some sort of airtight container? Thanks!!!!
I did that once, also I have cooked a turkey The trash can method where you use a galvanized trash can and I also smoked one in my Weber. The one on the Weber that was smoked I carved up like this My wife she wasn't mad but she wasn't happy because seeing those large chunks instead of slice thinly It was hard for her to adapt to a different way of doing it. It came out great moist juicy tender flavorful but she preferred thin slices.😊
Looks amazing and I feel confident now that I can carve it. Question though... isn't the turkey cold by the time all this is done? Seems like resting for 30 minutes and then all the time it's going to take to carve this up... do you end up having to heat it back up before serving?

Just one question: after the cooked turkey's been sitting for at least 30 minutes and after spending 15 minutes carving it (exposing it to air), the meat will no longer be warm. At least that's been my experience. Do you reheat the bird on a platter or do you just rely on hot gravy to keep it warm. Again, thanks.
Do you usually roast it whole or do you sometimes spatchcock it? Edited to ask: doesn't it get cold after first letting it sit for 30 minutes then the time involved to cut it up too? I am only asking because it always gets cold (obviously not refrigerator cold but definitely no longer hot) when I am cutting it all up. Do you recommend putting it back in the oven for a short time to heat it back up or will that dry it out?
Speaking of turkeys and gravy. Do you have a recipe for making gravy when you have no drippings? I want to take extra to my daughters because there is never enough gravy. Thanks in advance….
What do you do if you want to have the whole bird on the table for display? Don't hate me, but I use to use an electric knife so people didn't have to wait. In the last few years, I've started cooking the turkey the day before the big meal, and placing the carved pieces along with some of the juices, into the crock pot to rewarm the next day. It means that it's nice and hot when served and deliciously moist with no stress. It also saves a lot of time and fuss and clean up on the day of, and I can have the rack boiled for soup stock and frozen before we even have dinner! Unless requested, I never serve the drumsticks, as I find them too full of bones and such. They get chopped up for the soup. I always remove all the meat from the rack before boiling for soup, because I don't want to handle and pick it over again, and I find that after a lengthy boiling it gets tough.
Have you ever butterflied a chicken? Same for a turkey. Just cut along both sides of the backbone with your shears, flip it and press really hard on the breast bone. Tuck the wing tips under, splay the legs and you're all set!

30 mins is typical; kitchen shears will be new (I've a pair-never used on Turkey).

In my experience it's not cold. After resting 30 minutes or even twice as long, the meat is still hot. Just carve quickly and don't mess around!

It's not cold. Trust me on that. After a 30-60 minute rest that turkey is still hot and often too hot to handle

Dumb question. When serving , do we need it to be hot? Or maybe just warm?
I bet when he carves a turkey he moves along much faster than he did here. If you don't fan out the breast meat even that will stay warm if not hot.
