Thing number B: Yes, they put paprika on damn near everything....as if it was salt. Not terrible, but culture shock coming from TX Thing number C: As long as you're not an ass, Germans are the best friends you didn't know you needed.
The beer with the big amount of head are called "Schnitt". The bartender puts the glas straight up under the tap so the beer hits the glas harder which forms the big head. You usually order this as a last drink or a "absacker" before you leave the bar and dont want to drink a whole Maß

Depending on the region, sausage salad is prepared with various types of sausage cut into thin strips, cheese and a vinaigrette (vinegar and oil), served with fresh bread from a wood-fired oven. Meat salad, on the other hand, is also sausage cut into thin strips, but the mayo is the key ingredient.
From a german standpoint i can confirm, they have chosen well in what they ate. You can see they listend to the locals. Only exception: you dont eat the skin of a Weißwurst ;-)
Stationed in Germany for 4 years. Went to Oktoberfest every year on the train. Honestly you didn't really miss anything. Most of the tables are reserved after 5 pm so finding a place to sit down can be a challenge. I found that they played "Country Roads" a lot and was amazed everyone knew the words. Summer Fests are also a lot of fun as well as Faushing (Basically German Marti Gras). I wish I could remember all the good times I had in Munich but the Paulander Tent wiped most of that out. One thing about Germany, you can almost always find a Fest to go to (except during Lent. They seem to take that pretty serous)

The bread from the Döner Kebap is called "Fladenbrot" and it is normally a round fluffy bread. They just cut it in quarters and put it into the press to make it crispy on the outside (but also squish the crumb so they can fit more filling inside xD)

Pork knuckles on the rotisserie are the way to go! S-O-o-o-o envious of you guys. I miss the food and beers there. And the people. Very gracious for the most part.

Hitting all the good places I see....I've lived here in Bavaria (about an hour from Nuremburg) for just over 2 years and the beer, sausages, knudles (potato dumplings)...it's all REAL...and really good. Everywhere you go, there is traditional Bavarian cuisine to be had...and the Döner kebaps, YOU CANT GO WRONG! Glad you had a good time in Germany. I'm hoping to be here a few moe years.
For anyone who wants to look up on the Internet what that "Oktoberfest" in Augsburg was, it's called "Plärrer" and is hold twice in the year: around Eastern ("Osterplärrer") and in fall ("Herbstplärrer").

The bread is called turkish bread “turks brood” in dutch. They bake the bread and save it like a day or something and then re-bake it in a chud press kind of grill thing before they cut it open and stuff it full with goodies

Dutch invention of a german invantion made by the turkisch community every dutchie eats it after a night of drinking and going out very very good. Loved the europian series groetjes

Potato dumplings can have a weird consistency. It also depends if they are made with all raw potato or half raw and half pre-cooked. I personally love the flavour and consistency, but one thing that makes them even better is cutting them into slices and frying them off in a pan.

We Germans aren't that bad either 😂, it wasn't a typical German breakfast, in Munich it's called “Frühschoppen”, an early drink with a snack. For breakfast we only have coffee or tea and, depending on the region, pastries or bread rolls. I'm delighted that you enjoyed your stay in my home country so much.

you guys missed an opportunity to visit some ancient and mystical sites in Bavaria, such as the legendary Drachenschanze in Altschauerberg. Legend has it that if you visit it in the early hours or late evenings and your very quite you can still hear the sounds of the Oger who is supposed to have lived there a long time ago. We call those sounds "brüllheulne" and they remind us of simpler times.

There actually a little line on each glass of beer in Germany, wine as well, called the Ausschankmass (colloquially referred to as Eichstrich ). They are legally obligated to fill until that line with liquid, not foam. There's even a law that the calibration mark has to me 10 mm long. If the restaurant says the foam will turn into liquid you can wait till it does and then you reorder for free as it has become stale...
Next, Brothers, Spain & Portugal & Morocco. Don't forget the Canary Islands either (touristy, but loads of fun). Lighter style Cervaza all around, but well worth it.. You'll get a kick out of the Spanish dialect there, so different from Mexican Spanish in the States.
Was the potato dumpling include a meatball inside? We make a similar Polish/Lithuanian dish every New years. The meatball is made with beef kidney suit and the potato has the water squeezed out, and the starch added back to hold it together. Topped with bacon and onions. I hope the next European adventure is Poland. The duck stuffed with buckwheat is to die for

In northern Germany its also called "Schnelles" some times. Extreamly cheap in price and quick to do :-)
