Hi Cari back from the future again, I was looking up tofu watercress salad and your vid popped up. We grew up eating a lot of watercress, but it’s gotten expensive. First time seeing salad with blanched watercress always had it raw not cooked in any way in a salad, but yours looked great and color was still nice and vibrant. Your mom even said still crunchy. The tofu salad looked good, I know my Mom loves the canned salmon (is the one you used the red salmon or pink salmon?) and my one sister is a pescatarian, so I am going to give this recipe a try.
