I am from Dongbei or Northeast china, and one thing interesting is that the sour pickled cabbage is made so differently between northeast and Sichuan. The Sichuan one appear to be more greenish, textures leaves, and northeast ones are rather yellow and less textured, closer to the Sauerkraut people put on hotdogs. Yeah I always use Sauerkraut for a substitute when I'm trying to make northeastern food with no real sour cabbages.

There is a type of Malaysian hot pot call Lok Lok. That the soup base is a satay sauce(peanut sauce) and the food are all satay. There are also variation of soup base like ma la and clear soup base. Its sort of a fusion dish between Chinese and Malay dish. Do check out!

I just realized hotpot sounds like fancy fondue. Because the fondue I do at home (ironically called chinese fondue) is where you cook meat and veggies in a boiling broth. Hi Dylan, it depends, as mentioned in the video there are different types of hotpot all across China. If you like spicy the best hotpots are typically from sichuan restaurants. Most hotpot only restaurants are in NYC, LA and Chicago.
Have you ever eaten snake meat? I've had rattlesnake. It's a bit on the greasy side and tastes like a peppery sausage. It's not something I would travel vast distances for, but it was interesting to try and then take off my personal "bucket list".

That would be cool, however a tutorial for westerners might work too. I found myself in an asian market in Florida, asking about hotpot. I got steered to the Tom Yum Sauce. I am still trying to locate the right red peppers for a better homemade hotpot. Also, its been a challenge to find a hotplate that will get hot enough for a necessary boil at the table.....I thank you for the quality of your productions.
