HUEL (Black Edition) - Gluten Free High Protein Cookie

  • Tiffany decides to create her own GF, high protein breakfast in cookie form. This was an experiment that at first it seemed like it could have been a fail video. However, it ended with a pretty simple, yummy, and easy breakfast idea. Be sure to check out the recipe and substitutions!

    Dry Ingredients
    1 cup of Oats
    1 cup of GF Flour
    1 cup of Huel Black Edition Meal Replacement Powder (we used Cookies & Cream flavor)
    1/2 tsp Monk Fruit
    1 cup of Chocolate Chips
    1/2 tsp Psyllium Husk (see substitutions)
    1 tsp Baking Soda
    1 tsp Baking Powder
    1/2 tsp Salt
    Wet Ingredients
    1 stick Softened Butter
    2 Eggs
    Dash of Vanilla Extract
    1/2 cup Milk (See substitutions)
    Substitutions
    - sub 1/2 cup of milk for 1-2 bananas
    - use 1 tsp of psyllium husk instead of 1/2 tsp
    Instructions:
    1. Preheat oven to 350 degrees
    2. Mix together dry ingredients
    3. Mix together wet ingredients until smooth
    4. Mix together wet and dry ingredients until desired consistency
    5. Roll batter into ball and form into desired shape
    6. Place in the oven for 15-20 minutes. Remove and allow to cool for 20-30 minutes on a cooling rack
