[賤哥的灶卡] 蟹肉炒飯 Crab Meat fried Rice

  • 前一陣子螃蟹大特價, 買了一些來吃. 沒有吃完的, 把蟹肉撥好, 拿來做蟹肉炒飯也是不錯的.
    Crabs was on sale some time ago. I got some and steamed them for dinner. For the unfinished crabs, I removed all the meats and used them for this Crab Meat Fried Rice
    材料 Ingredients:
    螃蟹肉一份 A good Portion of Crab Meats
    綠花菜梗兩根 Broccoli stems 2 stalks
    高麗菜小份 Taiwan Cabbage a small piece
    雞蛋3顆 3 Eggs
    白飯3碗左右 White Rice about 3 rice bowls
    白胡椒粉適量 White Pepper Powder to season
    鹽適量 Salt to season
    醬油適量 Soy Sauce
    作法:
    1. 螃蟹肉備用
    Get the crab meats ready
    2. 綠花菜梗切去外皮. 切片, 切條再切成粒
    Cut away the outside skin of the broccoli stems. Slice and cut into small pieces
    3. 高麗菜切粒
    Cut the Taiwan cabbage into small pieces
    4. 大火熱炒鍋. 入油
    Heat the wok on high, add oil
    5. 油熱之後, 打入雞蛋. 弄散混合炒開
    Bring the oil on high heat, crack into the eggs. Stir well
    6. 加入綠花菜梗粒跟高麗菜粒
    Add the broccoli stems and Taiwan cabbage pieces
    7. 翻炒開來
    Stir and mix well to cook
    8. 加入白飯
    Add rice
    9. 把白飯壓炒開來. 需要可以補一點油
    Press the rice to break them down. Add extra oil if needed
    10. 炒散之後, 加入螃蟹肉翻炒
    Once the rice are all separated, add into the crab meats
    11. 把蟹肉炒熱. 也稍微弄散開來
    Cook until the crab meats are hot, break the meats if preferred
    12. 加入白胡椒粉
    Season with white pepper powder
    13. 加鹽拌炒
    Season with some salt
    14. 再加入約一炒勺量的醬油翻炒
    Add about one spatula amount of soy sauce to stir
    15. 炒開即可完成
    Stir well and ready to serve
