    About Pai:
    Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the TH-cam channel Pailin's Kitchen.
    Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
    After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via TH-cam videos, her cookbook, and cooking classes.       In southern Thai Saturn area, they add a little bit of butter or probably margerine for crab fried rice. Its taste so good.

      Hi! For deep frying or stir frying any neutral vegetable oil will do - but for deep frying she tends to use Canola, and for stir frying Avocado oil. Cheers! Adam

    I'd been cooking with Squid brand fish sauce for years. A week ago I bought just a generic supermarket brand, thinking that it would be "good enough". It tasted horrible. So to anyone thinking that fish sauce is just bad in general: buy a proper Asian product!

    And there you go my Westerner friends, how to eat rice with utensils. You use spoon to scoop the rice, and not fork. Thank you very nice. Btw Pai, love your video as always. I have just grown few bushes of Holy Basil so I can use them for my Thai cooking. 😁

      Because fork are made for poking into the meat while the other hands are slicing at the same time, and fork are also used for eating noodles, spaghetti 🍝, isn't it?? 😅 😅 😁😁😁, sorry for my poor English.

    Most Thai fried rice I have eaten has no color. What would the seasonings be please ans thank you?

      Hi Adam here - and Jasmine rice is almost always served plain (without salt or seasoning) - but then of course it's served with something else which may have sauces etc. Cheers!

    This is my mom's favorite dish. She always brings back crab meat whenever she goes to seaside towns so she can make this at home.

    Maybe the toping can use shrimp or other seafood? Since crabmeat was hard to find and quite expensive! 😋😊

      It can goes with every meat of choice. Actually in Thai home if you got a little bit of things left in the fridge (shrimp, sausage, bacon, pork, etc). The best way is fried rice with all of that mixed.

    Adding fish sauce really elevates the flavor. I started using it in all my fried rice and stir fry dishes. Also totally agree about getting the rice a bit crispy! It’s not fried rice to me if there’s no bits of crispy rice.

    Really like your tip on how the rice has to be toasted / fried instead of just mixed. A good fried rice has that 'charred' aroma and flavor to it.

    Sure gonna make this! Your explanations about little details are pretty outstanding!
    I stay away from the canned crab meat, as well. In some asian grocery stores around here (Hamburg, Germany area) you can get frozen crabmeat (like I can, here in Pinneberg): a much better quality! While fresh crabmeat isn't easy to find. A local crab here would be "Knieper". You can ask your fish monger for it.

    For years - decades even - I thought the lime was for garnish for some reason. But now, I know better and I cannot eat this type of fried rice without it

I just wanted to say I love your videos (been subscribed for.... years?) but I'm teaching writing composition through a food justice lens at the university level now and I use you videos all the time when students ask for authentic thai cuisine.     Nice show. A wood spatula is not suitable on a iron wok because it is thick at the end and can't scrape at the bottom of the wok. Use a steel spatula instead.😁

    Love the little pop-up commentary pieces that Art has added during editing. There is going to be pressure to keep them up for longer, please don't change that timing. It's wonderful the way it is.

    At my favorite Thai restaurant Thai nakorn in Garden Grove CA, every one raves about the pineapple fried rice. I've never tried it yet because I order so many other things. Do you make pineapple fried rice?

    Living in Vancouver, do you get a lot of Dungeness crab 🦀 😋. It's my favorite. I don't even dip it in butter or anything. I just clean it and put it in a cast iron skillet and a little beer bring it to temp in my bbq and eat it 😋

    I've always loved watching & learning from your videos, as much for the simple ways of doing Thai cooking, as for the variety. The greatest reward, however, has invariably been the joy of watching how endearingly animated you are, which makes your videos so engaging. But this one gave me more chuckles than I usually get.
