Indeed, it is a famous dish in Odisha and I appreciate Chef’s efforts in bringing Odia cuisine to the limelight. But this is not how Dalma is prepared in Odisha. Sorry, but this is just sambhar without Sambhar masala. Any Odia will know that in Dalma, veggies are cooked with raw dal.😊
Doesnt potatoes and yam take longer to cook ? By then the brinjals will be all soggy and mashed up, right?? So is it advisable to put in all veggies to cook at the same time?

Irrespective of the cooking time of any vegetable, all of them are put altogether... Only one whistle is required to cook after adding vegetable... If you are cooking in a pot...then you can add vegetable one after another according to your taste and texture preference... Hope now you get me.
The recipe is so off from the original authentic odia dalma. The one you are suggesting is more to appease to a North Indian palette. The OG Dalma is never spicy, the dal is not cooked like a pulp and only has lightly spiced tempering that too wid cow's ghee. Try it that way, you will find it much more delicious. And it goes best with par boiled rice. Bon apetit

But in dalma we don't use onion garlic... it's not authentic one..because dalma is a temple food in odisha ..and no use of onion garlic..in fact your way of cooking is also wrong..
My Nana Nani used to stay in Bhubaneswar & my aunt used to cook Dalma whenever we visited them...Love it....a similar version is also available with rice as prasad in Puri temple. It's sweet, salty and tasty.
This is not dalma, the use of onion and mustard oil is preposterous, bcoz we don't use them in the temple, we make with only Indian vegetables and we cook daal with vegetables and we use ghee for tempering

Mostly here in odisha... It goes with the rice with some desi ghee on top of it... Also goes well with puris... Do give it a try.. you will definitely gonna love...😊

Well presented. In temple dalma, onion is not used. Also, ghee is used for tampering. Ghee, panch foran and hing is must for the aroma.

Yes... It will be put all together... Obviously it will take some time... But then thats the beauty of it
