    PANCHMEL DAL
    Prep Time: 10 minutes
    Cook Time: 30 minutes
    Ingredients
    1 tbsp Ghee (घी)
    Water (पानी)
    ¼ cup Masoor Dal (मसूर दाल)
    ¼ cup Chana Dal (चना दाल)
    ¼ cup Tuvar Dal (तुवर दाल)
    ¼ cup Moong Dal (मूंग दाल)
    ¼ cup Urad dal (उड़द दाल)
    Salt to taste (नमक स्वादानुसार)
    1 tsp Turmeric Powder (हल्दी पाउडर)
    ½ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)
    For Tempering
    2 tbsp Ghee (घी)
    2-3 Dry Red Chillies (सूखी लाल मिर्च)
    ½ tsp Cumin Seeds (जीरा)
    ¼ tsp Asafoetida (हींग)
    1 medium Onion - sliced (प्याज़)
    1 inch Ginger - crushed (अदरक)
    1 tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)
    For Chilli Oil
    4 tbsp Oil (तेल)
    2 Dry Red Chillies (सूखी लाल मिर्च)
    ½ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)
    For Garnish
    Fresh Coriander Leaves (धनिया पत्ता)
    Process
    In a cooker add ghee, water, masoor dal, chana dal, tuvar dal, moong dal.
    Add urad dal, salt, turmeric powder , degi red chilli powder then put the lid on and give it 3-4 whistles.
    Switch off the flames and let it cool down properly.
    For Tempering
    In a kadai, add ghee, dry red chillies, cumin seeds, asafoetida and let it splutter well.
    Add onion, ginger and sauté until translucent.
    Now add degi red chilli powder and the cooked dal from the cooker.
    Boil it for 5 to 7 minutes on medium heat.
    Garnish it with the prepared chilli oil and coriander sprig.
    Serve hot with steam rice.
    For Chilli Oil
    In a tadka pan, heat oil once it's hot, add dry red chilli, degi red chilli powder and mix it well.

    Ranveer, you reminded me of my mother's "Milon ki Dal" .. Which means "Dal mix" in Garhwali langauge(Uttarakhand). Uttrakhand has rich tradition of unique dal preparations. Mentioning the same here(Since you are a "dal connoisseur"). Please do feature them in your videos if you are aware of them.
    1) Dal Chainso (Sabut urad - grounded on stone. Ghee tadka with "Jakhya- Pahadi jeera", then bhuno on thick bottom vessel, add water, cook till dal is done
    2) Dal Gaithon - Made from Horse Gram
    3) Dal Phanu - Made from Dal Tor Pahadi (Pigeon Pea) - Not Arhar - Dal first bioled(3-4 hours) in sendha namak and stone grounded.
    4) Dal Bhatwani - Made from Dal Bhatt - Pahadi Black Soyabean- Dal is first either fried in Ghee or Dry roasted
    5) Dal Bhaddu(Thick Brass vessel -like Ghada- Dal is known by vessel name). Assortment of sabut Dal's (Rajma, Sabut Urad, Tor, Gaith, Sem), slowly cooked over night on left over heat). This is Rock -Star of all Dals.

    We have 5 different senses Auditory (Hearing), Vision (Eye Sight), Gustatory (Taste), Olfactory (Smell) and Tactile (Sense of Touch). We has human interprete everything through input of these five senses, hence 5 gives us an complete sensual input to realize or elevate ourselves from what we knew previously. I think for Culinary journey these five senses are extremely important.

    I made the dal and started eating. I was using the phone and when I took the first bite, I kept aside the phone and ate it with all my soul! So tasty it was! I added some garlic though.

    You have given the answer, sir.
    5 fingers. When they combine, they can make war or food, art or writing. 5 fingers are everything that is unique to human being. And combination of these 5 fingers, i.e. evolution of opponens muscles in hand has differentiated human from all other species. This has been identified a long time ago, and thus great significance has been put on number 5.

    I too have always wondered why panchphoran (Bengali 5 spices) or Chinese five spices and few more are in fives. May be because it is easier to count with fingers in one hand, considering all of these recipes originated hundreds of years ago it made it a bit easier to pass the information in an era when books or ability to read and write weren't as common in civilizations.

    As for the number 5, according to the Greeks and romans, there are not five elements but four. Fire, water, earth, air. But there are five human senses! Sight, Sound, Touch, Smell, Taste. Maybe that inspired the numerological number 5?

    My mother use to put oil or ghee while cooking Dal but didn't know that it will not spill if you do so. I miss her in Dubai because she isn't here to guide me.     Ranveer I know the answer. Its our perception of quantity that 5 is very hard wired in our brain. In our consciousness while counting, we can figure the quantities on anything till 5 without counting. Example if I draw 4 small circles on a paper and ask you how many are circles, you will just look at the paper and say 4 without counting the number of circles. But if I draw 7 circles on the same paper, your eyes will travel on the entire paper counting each circle one by one and then you will say 7. So in our brain 5 is the number till which it is not a big group nor a small group but a perfect group that can be controlled easily and can give great balanced results, whether its dal, people, verses or let it be anything. Hope this comment doesn't get lost in the crowd which is way more than 5.

About the question that you asked - Why 5? - 5 fingers in each hand, 5 toes in each leg, 2 hands + 2 legs + 1 head makes human complete, pancha bhootas - 5 elelments make up the universe. I can add a lot more. IMHO, all these will be confirmation bias. If there are aliens with 6 fingers in each hand, I am sure they would have said 6 is an important number like we say about 5.But, 5 is a nice little number - half of 10 - which use for decimal system - because we have 10 fingers; its been useful to count 10. Just saying, what say
