      Hello, I have tried this recipe, I don't have a bread machine, so its with a stand mixer. My issue is I live out west, higher elevation, and EVERY loaf I have made just falls in after it cools. Looks amazing right out of the oven, and then disaster...HELP

      lauren serawop I read a post on another video that person added a pinch of baking soda to avoid the falling of the bread.

      @@LS-rn6me Try cutting back on the yeast, it solved the problem for me! In my case I ended up with just a bit under half the amount of yeast called for gave me well shaped slices and no collapse.

    This is very similar to bread that I've been making for years. I noticed in the video that your bread shrinks and kind of caves in on the sides. I used to have the same problem. I realized that it's because of too much yeast. I gradually cut back on the yeast til I found the balance between rise and no caving. In my case for 4 loaves of bread my recipe called for 2 Tbsp of yeast and I cut back to about 2 ½ tsp. Perfectly shaped slices, tall fluffy bread and problem solved!!

    A gorgeous loaf! You have the baker's touch!
    I used Diedre's recipe except I subbed the oat fiber with coconut flour + 1/2 c water and the xanthan gum with chia seeds 1-1. (I didn't have the others and I didn't want to buy more bags of ingredients till I use up what i have.) It worked out well though first I had to do some searching for how much coconut flour, in the end I just went with 1-1 and same amount extra water and loaded the machine, then let it rip. Just one loaf, how bad could it be after all? and it was DELICIOUS! All hail Diedre! She doesn't NEED to do another recipe ever! this one is so perfect.

      Right? I see commercial Keto bread now selling on social media with identical ingredients. I wouldn't be surprised if they stole Deidre's recipe.

    Her recipe is hands down the best keto bread. I make a loaf a week and take it in lunch or have with cheese like a grilled cheese sandwich,, love it .

      I love to slather a generous amount of butter on the bread and place it face down on a hot grill and toasting it.

    This bread came out fantastic. I would only add about 1.25 Tbsps of erythritol next time as it was a little sweet for me (I think bread in the USA is generally sweeter than in Europe). But the rise, the crumb - everything is sooooo delicious. Thank you.

      Christine Fitzgerald I like unsweetened bread, so I make it without sweetener, and it tastes great.

    I have made this bread using my KitchenAid Mixer (5th loaf) I have a double oven...I turn the bottom oven on and place raw bread in top oven for 1 hr. Talk about rise WOW....I then turn the bottom oven to 375 for 25 min to bake the bread and I have the best bread! Thank you again!

      I was waiting for the oat fiber as well but I did substitute oat flour since I really wanted to try out my new Goodwill breadmaker and it did not spike my Glucose very much at all. I even had two pieces with Kerrygold butter. Yum.

    Thanks for doing a version that starts in the bread machine but finishes in the oven. I prefer that as the hole left by the bread machine paddle is annoying! I also am glad you gave the rise time for when you took it out of the machine. Thank you!!!

      What I do is set a timer for after the last mix the machine does before the last rise and lift the dough and take the paddles off, then put the dough back in the machine and let it continue with the last rise and cooking of the bread. You’re left with only two really tiny holes, almost imperceptible.

    Thank you for your twist on this. I have made about 10 loaves in by bread machine but it never rises like deidre or keto kings. Yours was a little different and i will try the oven next like yours. Thank you

    Thanks for showing it go go through the whole dough cycle before rising again in the pan.
    I lost your video, didn’t find it till too late. I mixed in my bread machine but let it rise just in the pan for an hour. Only 1 rise, like Diedre does with her mixer.

    Diedra ... your bread is truly amazing. My daughter tried your recipe dough and made pizza and she and her husband said it was the best keto pizza she has had. They have ordered keto pizza from a popular pizza place and paid $27 and it was not nearly as good. Thank you 🙏

      cathy hall can U explain how they made it a pizza crust? I am soo over fat head dough 🤢!!! And would love to try pizza again. I have done many different pizza crust recipes,
      Chicken, sausage, cauliflower, fat head (w/almond, fat head with coconut flour, fat head with almond, coconut, and pecan. Flour... none of them are doing it for me. I haven’t had a pizza of any kind In Quite a while.. any way of you would like to share I would be very appreciative 🙂

    Thanks for showing what kind of yeast you use.
    Salt doesn’t help the yeast rise. It keeps the bread from rising too much.

      You can definitely make this by hand or with a mixer, I'm just too lazy to knead by hand lol. I haven't tried it yet but just based on my experience of making bread, I would put the dry ingredients in a bowl, add the water, eggs, yeast and honey and knead it until it comes together and then add softened butter and finish out the kneading. The oat fiber is super absorbent so you should end up with dough that is not wet. I would probably give it two rising stages, first after the first kneading for an hour and then shape it into a loaf and let it rise again for another hour before baking.

    Can I just ask which brand of Vital wheat gluten are you using? I have all the ingredients and checked my yeast by blooming in a separate bowl to make sure my yeast is alive but it just does not rise! I've had 4 fails already. But I really want this to work cause I miss bread and sandwiches

    This is excellent recipe but for people they live in Canada or cold weather just add 1 1/2 cup of vital wheat gluten in order to have good raise of the loaf. Don’t forget the eggs need to be a room temperature.

    I am not sure why, but I have had no luck with this recipe so far. Possibly over knead it? Or possibly two rises were a bad idea. It rises rather quickly, and both times I have baked it I have ended up punching it down and letting it rise a second time. But generally speaking, the flavor is pretty bland and kind of like cardboard? And the texture is entirely too chewy/rubbery. I have not been able to get my family to even touch it. Even though it looks absolutely fantastic, the crumb and taste is awful. Any suggestions? I do not use a bread machine. I have a stand mixer.

      Roy Bean, I do both but for the time I was making this video, the dough would rise over the breadmaker and not bake properly. I usually ended up with a gooey, raw top. I figured out it was because the water I was using was too warm. Now I use slighter cooler water and it bakes perfectly in the breadmaker. I no longer make it on the oven unless I'm using it for rolls.

      @@chefshan7 I make 12 rolls. I just divide the dough after its first rise into 1/2, then divide the 1/2 again to get 4 equal parts. Then I divide each 4 parts into 3 equal dough balls to give me 12 rolls, then I let it rise again for another 45 minutes to an hour before baking.

      You can swap in equal measure of Lupin flour.....cut "most" sweetener out and it is close to store bought bread.

    Can you please help me? I made this yesterday, but it did not rise when I did it in my stand mixer. So, today I made it in my vertical bread machine. It rose beautifully, and was even touching the cover on the inside, but 30 minutes before the cycle ended, it fell like a souffle! I took it out of the pan once done and laid it on its side, and it has fallen on the side also. What did I do wrong? Thanks for any help!

      It is possible your yeast is expired. Also dont make the water hot. It should only be slightly warm or you will kill the yeasts. Ive found this recipe two weeks ago and made 7 perfect loaves so far. Ive NOT had even one bad one. Its also much easier to make this with a bread maker machine. I took Keto King's advice to pick up one for 10 bucks. I paid 15 dollars and still new only 2 yrs old and hardly used. You can get it in craiglist or OfferUp. I got mine in OfferUp much better selections. The 15 dollars I paid for was beyond worth it. I boughy it only for this recipe. The bread come out perfect everytime!

    I'm relatively new to Keto. I tried several recipes but none seemed to really work very well.
    I tried Deidre's recipe and I made I loaf that was decent but not exactly what I wanted.
    I came across R Wolf's rendition and took to it
    like a duck to water.
    The love came out beautiful I took it out of the oven and I must have been rough with it or something because it fell in on itself. Does anyone have an idea to keep the love from deflating?

    When you made it in your bread machine which selection did you pick? White wheat etc?

      My Hamilton Beach model has a 1.5 lb and 2 lb setting and I do the 1.5 lb. There's also a setting for whole grain but I've never tried it yet.

    I have made 4 loaves and they come straight out of the oven beautiful like yours but within 1-2 mins it all caves in. Any suggestions? What size is your loaf pan?

      I haven't tried any other substitutes and this is my first time working with oat fiber. Anyone out there know the answer to this question?

      @@lisiatew I did use oat flour since no-one had oat fiber in the stores around my neck of the Woods. I am a diabetic and it did not make my glucose go up much at all. It also worked out great on the bread since there is just not a lot of it per slice.

      I did the same.. my Glucose did not rise either. Even though of trying rye flour or possible real oatmeal because there is so little per slice .. I though of trying dark rye flour substitute and adding caraway.

    Why didnt you just leave the the dough in bread maker machine and let it do the whole process? It's much easier. Ive done this bread 7 times since I discovered it 2 weeks ago. My husband and I love this bread by Diedre but I followed the slightly modified instruction by Keto King which is really good. Its definitely the best keto bread thats closest texture and flavor of regular bread. And I dont stir it up or anything. The machine does it all for me. I just leave it after I put all the ingredients. And yes, its best to make this bread loaf in bread maker machine. I picked up a used $15 one in OfferUp. Goodluck!

      I had the problem of over rising when I first started making this bread. I now add just a little more salt to temper the yeast and making sure my water is not too warm. Now it bakes just fine in the bread maker.

    I've tried twice now to make this and both times it wouldn't rise and came out doughy. I've made plenty of "normal" bread in the past and never had any trouble. Could anyone who has successfully made this bread, pretty please :) measure out and then weigh each dry ingredient (preferably in grams) and give quantities for liquid ingredients in millilitres. I live in Australia and I have a sneaking suspicion that my problem is because of the difference in cup and spoon measurements. Also weights tend to be a lot more accurate. My cup might not be as tightly packed as your cup. Thankyou. Can't wait to taste this once I'm successful at making it.
    PS. Has anyone tried using MCT oil instead of butter? MCT oil is better for me as I don't have a gallbladder and can't digest fats as well as I used to.

      Yeast is everything. I used SAF yeast that I order from Amazon or king Arthur flour. I thought my bread was going to explode my oven, well not really but had to bake it after a 30 minute rise time. I have tried other brands and have not gotten this result. I am making buns this weekend. 👍

      I saw in Diedre's Kitchen that some people left out to rise longer. Diedre also says to put in warm moist environment. Do a search of her videos (she's got 2) and the comments will give you a lot of insight into what others have tried. Good luck!

      I tie on my oven at 50 degrees centigrade ( I’m in uk I don’t know how ivy is in Fahrenheit) and I left there to rise for an hour and wow was amazing 😉

      I haven't tried MCT oil but I assume it will slightly change the crumb and texture of the bread but it still should produce good results since many breads out there are made with olive oil.

      It is possible your yeast is expired. Also dont make the water hot. It should only be slightly warm or you will kill the yeasts. Ive found this recipe two weeks ago and made 7 perfect loaves so far. Ive NOT had even one bad one. Its also much easier to make this with a bread maker machine. I took Keto King's advice to pick up one for 10 bucks. I paid 15 dollars and still new only 2 yrs old and hardly used. You can get it in craiglist or OfferUp. I got mine in OfferUp much better selections. The 15 dollars I paid for was beyond worth it. I boughy it only for this recipe. The bread come out perfect everytime!

      I got 12 out of this loaf. It varies for me, sometimes I get 10, sometimes 12.

      Not so much buns but I have made rolls with them a couple of times. The recipe yielded 12 rolls for me but it really all depends on how big you size them. The rolls turned out great. I don't think it would be that hard to shape them into buns and you should get the same exceptional results.

      Vital wheat gluten is a PROTEIN isolated from wheat after all the starch is removed. A cup has only 12 net carbs.

      Yes, AliceK. Keto is more about what you eat, than just the # of carbs, so neither wheat or oat products are normally used. Both wheat gluten and oat fiber could have the possibility of causing some inflammation -- and that's one of the plus points for Keto eaters not using wheat or oat products, in addition to no artificial sweeteners. Actually, I have only seen this recipe of Deidre called Low-Carb; and not Keto-Friendly; so that might just be the creative license taken by the maker of the video.

      @@JudyPurrington Technically speaking, a ketogenic diet means you create ketones bodies. That is the literal translation of "ketogenic". In the popular sphere, some people have decided that avoiding inflammatory foods is required on "keto", but any doctor will explain that the meaning of ketogenic is simply making ketone bodies. You can do this in many ways, Dr. Annette Bozworth says exactly this and she is a huge keto proponent on TH-cam. She posts weekly and saved her Mom's life with a ketogenic diet and fasting--she's written a book about that journey.
      Other people say that keto requires 70 or 80% fat macros. Certainly this will result in ketosis, but everyone's body is different and many don't need this high fat intake to stay in ketosis. I certainly don't.

      Thats your opinion for your taste buds. If we grew up eating bread thats not sweet we would probably feel the same way but we didnt
