You never told us how much psyllium husk goes in your recipe and when you were grinding your pork rinds, you said 3 cups and then when you mixed it up into your yellow ball, you said 4 cups could you re-post that or send a message please
@@daveosburn9227Darn, I must have edited out that. I always put the recipes in the descriptions also with the right amounts of everything. It is a quarter cup of psyllium and four cups of pork breadcrumbs. I measured out the one cup to show that it was accurate and then I measured out the other three cups, so four cups total
@@irisbrookes7633 You could substitute chicken flour. You should be able to substitute almond flour with a little bit of coconut flour, but that would be an experiment... I haven't tried that yet myself

This recipe looks awesome. Here is a bit of helpful info for baking with psyllium. The bread needs to be 180-200o F to be fully cooked. Once I found this info I’ve never had that wet texture you get from psyllium.

I made this today and by golly it’s a keeper! I ran out of pork rinds so I used half parmesan cheese and half pork rinds and it was awesome. Yep… This will be a staple at my house. Thank you.
So I made this last night! Texture dead-on like an artisanal wheat bread - or like my husband said, "Is it cornbread?" So thinking maybe some cornbread extract/flavoring might be a total dupe! Mine turned out a bit dense, so next time will try only one stick of butter. Also for those new to pork rinds (like me) you can't get them too fine, and I would suggest trying to sift to remove the bigger kernels or whatever those chunks are called. I think I might try to add a tablespoon of vinegar to help negate the rind taste, and a quarter cup of coconut flour to help with the moisture/density (probably my baking powder is kaput... o well). Overall a winner - taste more like bread than any other straight keto/carni recipe I've tried, and I've tried A LOT! Kudos, Southern Dude!

Ok, so I just made this. Only thing I did different is add a tsp of yeast. Results: very very good! My first "bread" in 2 years. Only thing I would do is only add 1 stick of butter than 2. Texture is grainy, so small bites. But the flavor was really good
Awesome! Yes, one stick is great unless you want to do what I do and bake or fry the bread without additional butter.... You can blend it up a little more with an immersion blender to make it a little smoother. So glad you enjoyed it!

I just made this bread this morning. I'm eating it now with collard greens. The bread is delicious. I used my VitaMix blender to make the pork panko and to make psyllium husk powder out of whole psyllium husks. I used my stand mixer to beat the eggs, cream cheese, butter, lemon juice, and sour cream. Then I added the dry ingredients on low speed. Thank you for developing this recipe.

I didn't see the macros on this so in case anyone is interested there is about 58 grams of carbs in the entire loaf. So you can figure out carbs per slice once you know how many slices you are getting out of your loaf. Great video and great recipe, thank you so much for doing this.

@@southernketo Totally agree it is hard, even pork rinds which most people assume have 0 carbs (and most do), but some companies slip in a dash of sugar or cook it in vegetable oil or whatever and that adds a few carbs here and there. So it really comes down to the ingredients you use. Anyway thanks again for taking the time to create this recipe.
I’m eating a grilled cheese with this bread. Delicious. Someone may have commented on this, but haven’t seen it. I think adding caraway seeds for a rye bread like flavor would be amazing. Especially for your Reuben sandwich !

Update...... It's a petite little thing 🍞 But that's because I only made half a batch. I think it's perfect to be honest with you. So here's my consensus. I won't be using it for a regular bread sandwich, but toasted it was yummy and very filling. I will use the rest of my loaf making grilled cheese and french toast and more regular toast. It is most definitely very buttery even though I only used a half a stick of butter. I did add instant yeast about a teaspoon and half since there wasn't really liquid in it to bloom the yeast so I thought the instant would be the best. I can't say it tastes yeasty, but it does have good flavor. I cooked it for 60 minutes and used a silicone baking pan lined with parchment paper. My toothpick came out clean and dry and my temperature gauge said 208. I think I could've cooked it a little longer though as it is a little bit moist inside. It's really good Victor. I definitely endorse it for those of you who like a wheat artesian bread. I posted a pic of my little 1/2 batch loaf over on Southern Keto's facebook page. I also wanted to post here for people who are not on facebook and cause posting helps the youtube algorithm 🙂
Thank you so much for the review! I have found a difference between using the grass-fed butter and regular butter also... The regular butter came out with a higher moisture level not sure if you did that or not. Normally, if I wanted a regular sandwich I would just toast it or Put it in a hot skillet for a minute or two to cook it a little more if it wasn't quite done... I believe regular butter has more water content, you will see the difference when you make brown butter bites. I do need to try this bread, I’ve try so many at this point to no avail…

I agree this bread will be very expensive for one loaf. If you were using it as simply a substitute for regular non-keto bread I don’t think it would be worth it. But if you realise that with all the nutrition in it, one sandwich would be a filling meal, then suddenly it’s not so expensive.
My motto is, pay a little more for great food, or pay A LOT more for doctors and hospitals 😉 It is very filling and people will pay $12 at McDonald's for one meal and not think twice about it 🤷🏻♂️
@@southernketo I say the same thing, pay now or pay later. I had all of the ingredients already in my pantry, they are all staples of a keto/carnivore diet, so I don't consider it expensive at all when "keto" breads out there are about $6 if you can find them, and most still have wheat. This yields a large loaf, and the slices are very filling individually.

Yes, lots of protein in the bread, so it is a non issue. You are eating eggs. Not a problem. Very low carb too. Lots of fat. So, it is a main part of the diet, while getting the bread sensation. Win-win.

I prepared this recipe almost exactly (I forgot the lemon juice and butter)and it turned out scrumptious! Next time I will add the lemon juice and butter, just to see how much more scrumptious it gets. 👍🏻X10
Awesome! The lemon juice does add slight flavor, but the biggest thing it does is keeps the bread from turning purple with some of the psyllium. I would just do the one stick of butter. That's what I've gone to myself now. Two sticks just makes it too filling...

I made this a few days ago. I’ve had several grilled cheese, turkey and swiss sandwiches. Tonight I had a burger on this bread. This will be my go to from now on. I also replaced the psyllium powder with chicken flour. It was delicious.

Finally got to make this. (In the process of moving so I wasn’t buying as much food and only had partial pork rinds, so I used the other example in the comments and used part Parmesan cheese) - Plus didn’t have enough for my loaf pan and made 9 muffins instead. Cooked in about half the time and worked well. Already tested some tomato cheese toast, some avocado toast and an egg & cheese sandwich with it. Great texture and enjoyable. Thanks, man.

Absolutely! If you want it to taste more like bread, add one packet of yeast to it. I didn't use that in my ingredients, because I didn't want anyone to think that it was necessary for the recipe. Hope you enjoy that BLT!
Well this is the after bake update. The texture of bread is fantastic it actually rose in the oven which I could not believe because it’s not yeast bread. Overall it’s the best I’ve done. Couple things… first I baked it in a 350 oven for 50 minutes and then after reading the comments I ended up testing the internal temperature and at that point it was only 110° so I continued baking for an additional 20 minutes at 350 and then I shut the oven off and opened the door and let it sit in the oven for 30 minutes. The internal temperature was then 195 I think that part came out great. My question is I only used one stick of butter and it is so kind of oily that it’s just everywhere and even after it cool if you touch the bread with your hand your hand is just as if you dipped it into a bowl of oil so I’m wondering do you think it’s possible to maybe only use a half a stick of butter to try to cut down on the amount of the oily texture? other than that this is definitely fantastic and the taste was extremely good. I have been reading where others have added a little yeast to it not to make it rise but to give it that yeast flavor which would almost make it just like a home baked flour based loaf of bread.
Sounds really good! The couple things I would change is bake it until it gets to that 200 degree mark before you turn the oven off. Even when I use two sticks of butter, it absorbs it. I would try the one stick first and that technique next time, or use that technique with a half a stick and see what happens. When I was early on and testing it, if I didn't bake it long enough it stayed oily and never absorbed it all
I made this today, and I love it! Next time I will cut down on the butter to see how it affects the moisture; I used one and a half sticks this time. I love the taste, the solid brown crust, and how easy it is to pull together. I had all of the ingredients except that I only had whole psyllium husks, but I just pulverized some of it in a grinder, and it worked just fine. Will definitely use the tip above to use a thermometer. Thank you so much for this recipe! I hate the "best keto bread" that tastes like memory foam! 😂

I made the bread recipe and I have found my heavenly bread that I have been looking for. It was simple and came out just as you stated in your video. I just made this, and it cost me about $11.00. I'm in Southern California. It is a bit expensive, especially with egg prices on the rise. At least it's Keto. I'm making excuses, I know... I cut the bread thinner than what regular bread is cut, and I only use 2 slices a day. I'm wondering if it freezes well... It tastes pretty good, and since I haven't been eating bread lately, it's so nice to have again, so thank you!
Even at your prices, I don't think that's very expensive. That and some meat and it's a full meal. People will spend $15 for a meal at McDonald's... I cut it thinner as well. I would cut it first and then freeze it so that you can thaw out as many pieces as you want at a time. It freezes perfectly. 😁
Don’t doubt this is awesome. Trying to understand what is healthy about this bread….it’s like 8.000 calories…12 eggs, 8oz cream cheese, 4 cups of pork rinds, 2 sticks of butter….holy moly
I do keto and recognize it is low carb. But holy moly, it is dirty keto. One grilled cheese sandwich would be my total caloric intake for a day. May want to take off the “Healthy” text, that is far from the case.
@@Baswallait's totally clean. It's designed to be an entire meal with meat and some toppings. If that exceeds your caloric intake for the day, you may be doing keto wrong....

Hey, we have the same toaster. This bread will toast up so fabulous. Beefsteak tomato is perfect for that tomato sandwich with LOTS of zero carb mayo...your Duke's recipe!
I rarely get to use that toaster 😁 I would recommend it with the one stick of butter, instead of the two but I have toasted plenty of this bread with two sticks in there as well, but it is kind of scary because it bubbles up. I would definitely recommend a toaster oven over to this for safety reasons, but I haven't burned down the house yet 🤞🏻
Oh Victor, I had to do it (crazy Grammy) I added caraway seeds & 1.5 tsp King Arthur's Deli Rye flavor, for a rye bread like taste) & dill weed. I just put my2nd loaf of bread in the oven. My 1st loaf was "as you prescribed" & off the charts fabulous!!! ...Ruben's anyone? 😋
Hey there! I've never tried it because I was trying to just use whole eggs. I would think if you did try it, I would definitely use the two stick of butter recipe for the extra fat. Curious to know how it turns out if you do try it .
Update-as I posted earlier, I tried to make this only I beat the egg whites separately and folded them in at the end. Didn't work. The eggwhites quickly lost their fluffiness as I tried to fold them in. The butter probably did that. However the loaf came out fine. Rose much more than I thought it would. It is very heavy on the pork rind taste so I hope to figure out how to get rid of that flavor.
That's what I found with the egg whites also. What kind of pork rinds did you use? I have found that the fresher they are, the less pork rindy they are... I also have something really good coming.. Just finishing up testing it this week. Still pork rinds but zero taste every time. We'll see after this week 😁
You can replace it with chicken flour. Almond flour should work as well, but I haven't tested it. I would use 2 sticks of butter with the chicken flour.

... and eggs, lol. As a child my mom would always make tomato/eggs/bacon sandwiches, in my 60 yrs I've never had it w/out eggs. I remember in college when a friend ordered a BLT I was like, um nope it's missing something 🤣.
@@southernketo I just grind up peanuts that I get off Amazon in a food processor. I use Wegotnuts brand that comes in 5 pound bags. 3 cups of peanuts makes about 1 1/2 cups of peanut butter. Lately I've been adding 1/2 teaspoon of sea salt. YUM!

So I rechecked the ingredients & re watched your video. Yours was thick...by the time I got back to my bowl it had thickened up perfectly! Awesome! The yellow bowl is magical! It makes everything taste better and instantly thickens too 🤣🤣🤣 I used some different pork rinds when I was testing this thing once and the same thing happened.. It just took a minute to absorb. Don't know if they were too dry or what 🤷🏻♂️ but it turned out great!

I had to mess around with it to get it to act right and I tried it without the baking powder before and just did what you said. For some reason, adding the baking powder in combination with the other stuff made it rise better. I thought it was weird and wouldn't have even tried baking powder except I was running out of cream of tartar and figured it would be the same. That was when I did my first perfect loaf 🍞
I found you through Wes's Highfalutin low carb. I was going to look for your site but your site just popped up. I'm Carnivore and I think this is close enough to use for a good burger or brisket sandwich. Going to be checking your other recipes to see what else I can incorporate into my carnivore life style.

Definitely refrigerate it. I used that bread container like I showed in the video, but someone else said you can put it in a gallon freezer bag also. If you don't want to eat it all at once, you can always cut it up and freeze it and that works awesome! You can get a piece or two whenever you want it. You're welcome!
I made this read today with 2 sticks of butter…turned out great. Put mine in a metal sandwich loaf pan with a slide on lid. Temp checked after 60 minutes 200*F on the money & the loaf filled the pan just right. Forgot the lemon juice but it didn’t affect as far as I can see. Great taste & very rich with 2 sticks of butter & a bit greasy but looks & taste like bread with the ‘bread’ mouth feel. 👍👍. I wonder if you could sub 1:1 egg with sour dough starter discard, maybe 1 cup to get that sour dough taste.
Awesome! Sounds like you did it perfect! I did the 2 sticks of butter for 2 reasons, one was to make sure a sandwich was enough to make an entire meal and keep you full. It's not necessary, just adds some fat. Maybe so, I've never tried it, but I don't think it would hurt the results enough to not try it. 😁 Let me know if you do 🙏🏻

Just got done with this super creative bread. I wish I could upload a picture. It turned out amazing. It's high fat, moderate protein and low carb. If that isn't keto I don't know what is. Tip... I needed more pork rinds than initially thought to make it look like this one. No worries just crushed more. I didn't crush it quite fine enough so that's why it wasn't enough. Also when it sat in the oven with door open but oven off, unbeknownst to me the oils somehow found there way off the paper and onto the oven bottom. Went to preheat for something else and had a smokey kitchen in short order. You may want to learn from my mistake and put a sheet pan under it. Awesome, filling bread though!!

My suggest you would be to use mostly almond flour and a little coconut flour in there to make up the four cups. Now, I haven't tried this, but I believe it would work pretty good. Please let me know if you decide to try it so that I can let other people know as well 🙏🏻😁
I really wanted to like this, having made a similar recipe without the psyllium husk, but it took me well over an hour to prepare and then I ended up not liking it. I've found that fiber is not my friend and this type of powder gives a gritty texture to the bread. I even used the link to buy the one you had. I hoped that the small amount wouldn't matter, but I'm also concerned about possible blockages if not eaten with enough liquids. I was also surprised to learn that psyllium is commonly used in low carb baking, so if it works for you, that's great. Thanks for working so hard on developing recipes.
Darn.. I don't get a gritty texture at all out of it... Do you think it could be The pork rinds? You could try using oat fiber, too, but I haven't tried it myself. You're welcome 😁

So I made this bread today and totally forgot to include the butter!🤦🏽♀️ Left it in the microwave! Funny thing is, it looked amazing and tasted fine though I toasted my piece. My husband who can’t do without his white bread, liked it as is and told me I should continue making without the butter. PS: I’m not a baker.😂
😳 oh wow! You may be onto something there... I included the butter to make it super filling and basically like a complete meal. That was one of my key ingredients from the beginning, so I never tried it without it. Maybe I'll have to give it a try 🤔😁

I’m not sure what part of the recipe is expensive? Granted having staples like baking soda, baking powder, cream of tartar, pink Himalayan salt are usually in one’s pantry. And I found that the cheap Walmart brand of pork rinds ended up being the best option - ingredients are pork rinds and salt. Every other brand had other stuff added which I didn’t want. So the 2 5 oz bags were exactly what I needed. And taking them out on the porch and using my rolling pin on them was therapeutic in so many ways lol! And I basically prepped them for the next loaf. I will need to go to a farm tomorrow to buy some quality eggs - they charge 3.00/dozen which is awesome price for free range chickens. You could use bottled lemon juice if you had to. And yes - if you can afford the better quality butter and cream cheese, that part is a bit pricey but I usually keep that on hand because - well, keto! Also you can make your own butter by taking heavy whipping cream and beating it until it turns into butter. Add salt and wrap in parchment paper. The leftover whey can be used in different recipes but I’d probably give it to my dogs in one of their food toppers that I prepare for them. Keto isn’t just for humans! My Husky Snickers lived to be almost 19. He was active his entire life and his weight maintained between 50-55 lbs his whole life. And yes I do feel that his diet played a part. I don't think it is, especially considering that two slices, some meat and some toppings is a full meal and you definitely won't be hungry! I think people are expecting to me like some Weeny little Sandwich bread. Or, some may just want to complain and say Keto is too expensive to justify their $15 "value meal" from McDonald's. Man I have some bad memories from making bread recipes with psyllium husk but I’ll still give yours a try. A half recipe at least lol. All of my past ones from other ppl turned purple and have a weird sponge texture
I just made this bread with 1 stick of butter and placed it on a cookie sheet, just in case. It was a bit wet even after cooking the full 70 mins and then the additional 30 mins and cooling. However, I believe that was my issue, the bread pan was slightly smaller so, I had a lot loft. I'll try it again and adjust my temperatures and think that it would be fine once toasted. My husband hates pork rinds and I did the 50/50 pork panko/parmesan cheese. He thought that it tasted good but when he hears "bread" he thinks of old school bread. I think that it will make a great savory bread and could be a good bread for sunny side up eggs. I may try someone's suggestion of subbing chicken flour for psyllium husk powder. Sure, it isn't on the cheap side to make but it's basically, a sliceable piece of fat and protein addition that you can sandwich other items or just eat as a slice. A grab and go item if needed. I like that other than the psyllium husk powder, there are no other special ingredients. Thank you for that!
Considering that people spend $15 for one meal at McDonald's these days, I don't think the price is bad at all... I would definitely try to check the internal temperature and make sure it gets to 200. Those are some great ideas! Enjoy!
@@southernketoI personally don't think that it's bad price-wise, I've purchased expensive "keto" ingredients for years and compared to that, it's quite inexpensive. However, the reality is that for some, who are in difficult financial situations, the accumulative cost does at up but it is offset by the fact that it's entirely made from protein and fat, which means that it is also quite filling so, a little goes a long way if one needed to stretch it out further. It's also mostly everyday items one would find in a Keto kitchen. Yes, I agree on the McDonalds reference but those people also likely are not going to McDonalds. I like your recipe enough that I'm willing to work out my variables. I see the value, appreciate the work that you put in and convenience in using regular items instead of special ingredients, it has a great satiety profile and flexible use. You did a great job!

Could you use beef gelatin instead of cream of tartar powder? Trying to eat as much collagen as possible, and love this recipe because the use of the pork rinds! Genius! Also wonder if you could replace the cream cheese for cottage cheese for more protein. I have to try it!
No, The cream of tartar is to help it rise. Unfortunately, I would say no on the cottage cheese substitution too... The cream cheese helps give it stability and the fat profiles are different

That loaf of bread, even though it looks lovely, and I'm sure, tastes great, would cost approximately $23.00 Canadian, and that is using the cheapest version of each of the ingredients. I don't think I can afford it.

It is a quarter cup of psyllium and four cups of pork breadcrumbs. I measured out the one cup to show that it was accurate and then I measured out the other three cups, so four cups total

This recipe looks awesome. Here is a bit of helpful info for baking with psyllium.
The bread needs to be 180-200o F to be fully cooked. Once I found this info I’ve never had that wet texture you get from psyllium.

So I made this last night! Texture dead-on like an artisanal wheat bread - or like my husband said, "Is it cornbread?" So thinking maybe some cornbread extract/flavoring might be a total dupe! Mine turned out a bit dense, so next time will try only one stick of butter. Also for those new to pork rinds (like me) you can't get them too fine, and I would suggest trying to sift to remove the bigger kernels or whatever those chunks are called. I think I might try to add a tablespoon of vinegar to help negate the rind taste, and a quarter cup of coconut flour to help with the moisture/density (probably my baking powder is kaput... o well). Overall a winner - taste more like bread than any other straight keto/carni recipe I've tried, and I've tried A LOT! Kudos, Southern Dude!

Ok, so I just made this. Only thing I did different is add a tsp of yeast. Results: very very good! My first "bread" in 2 years. Only thing I would do is only add 1 stick of butter than 2. Texture is grainy, so small bites. But the flavor was really good
Awesome! Yes, one stick is great unless you want to do what I do and bake or fry the bread without additional butter.... You can blend it up a little more with an immersion blender to make it a little smoother. So glad you enjoyed it!

I just made this bread this morning. I'm eating it now with collard greens. The bread is delicious. I used my VitaMix blender to make the pork panko and to make psyllium husk powder out of whole psyllium husks. I used my stand mixer to beat the eggs, cream cheese, butter, lemon juice, and sour cream. Then I added the dry ingredients on low speed. Thank you for developing this recipe.

I didn't see the macros on this so in case anyone is interested there is about 58 grams of carbs in the entire loaf.
So you can figure out carbs per slice once you know how many slices you are getting out of your loaf.

Update...... It's a petite little thing 🍞 But that's because I only made half a batch. I think it's perfect to be honest with you. So here's my consensus. I won't be using it for a regular bread sandwich, but toasted it was yummy and very filling. I will use the rest of my loaf making grilled cheese and french toast and more regular toast. It is most definitely very buttery even though I only used a half a stick of butter. I did add instant yeast about a teaspoon and half since there wasn't really liquid in it to bloom the yeast so I thought the instant would be the best. I can't say it tastes yeasty, but it does have good flavor. I cooked it for 60 minutes and used a silicone baking pan lined with parchment paper. My toothpick came out clean and dry and my temperature gauge said 208. I think I could've cooked it a little longer though as it is a little bit moist inside. It's really good Victor. I definitely endorse it for those of you who like a wheat artesian bread. I posted a pic of my little 1/2 batch loaf over on Southern Keto's facebook page. I also wanted to post here for people who are not on facebook and cause posting helps the youtube algorithm 🙂
Thank you so much for the review! I have found a difference between using the grass-fed butter and regular butter also... The regular butter came out with a higher moisture level not sure if you did that or not. Normally, if I wanted a regular sandwich I would just toast it or Put it in a hot skillet for a minute or two to cook it a little more if it wasn't quite done... I believe regular butter has more water content, you will see the difference when you make brown butter bites.

I agree this bread will be very expensive for one loaf. If you were using it as simply a substitute for regular non-keto bread I don’t think it would be worth it. But if you realise that with all the nutrition in it, one sandwich would be a filling meal, then suddenly it’s not so expensive.
My motto is, pay a little more for great food, or pay A LOT more for doctors and hospitals 😉 It is very filling and people will pay $12 at McDonald's for one meal and not think twice about it 🤷🏻♂️

I had all of the ingredients already in my pantry, they are all staples of a keto/carnivore diet, so I don't consider it expensive at all when "keto" breads out there are about $6 if you can find them, and most still have wheat. This yields a large loaf, and the slices are very filling individually.

Yes, lots of protein in the bread, so it is a non issue. You are eating eggs. Not a problem. Very low carb too. Lots of fat. So, it is a main part of the diet, while getting the bread sensation. Win-win.

Awesome! The lemon juice does add slight flavor, but the biggest thing it does is keeps the bread from turning purple with some of the psyllium. I would just do the one stick of butter. That's what I've gone to myself now. Two sticks just makes it too filling...

Finally got to make this. (In the process of moving so I wasn’t buying as much food and only had partial pork rinds, so I used the other example in the comments and used part Parmesan cheese) - Plus didn’t have enough for my loaf pan and made 9 muffins instead. Cooked in about half the time and worked well. Already tested some tomato cheese toast, some avocado toast and an egg & cheese sandwich with it. Great texture and enjoyable. Thanks, man.

Absolutely! If you want it to taste more like bread, add one packet of yeast to it. I didn't use that in my ingredients, because I didn't want anyone to think that it was necessary for the recipe. Hope you enjoy that BLT!
Well this is the after bake update. The texture of bread is fantastic it actually rose in the oven which I could not believe because it’s not yeast bread. Overall it’s the best I’ve done.
Couple things… first I baked it in a 350 oven for 50 minutes and then after reading the comments I ended up testing the internal temperature and at that point it was only 110° so I continued baking for an additional 20 minutes at 350 and then I shut the oven off and opened the door and let it sit in the oven for 30 minutes. The internal temperature was then 195
I think that part came out great.
My question is I only used one stick of butter and it is so kind of oily that it’s just everywhere and even after it cool if you touch the bread with your hand your hand is just as if you dipped it into a bowl of oil so I’m wondering do you think it’s possible to maybe only use a half a stick of butter to try to cut down on the amount of the oily texture?
other than that this is definitely fantastic and the taste was extremely good.
I have been reading where others have added a little yeast to it not to make it rise but to give it that yeast flavor which would almost make it just like a home baked flour based loaf of bread.
Sounds really good! The couple things I would change is bake it until it gets to that 200 degree mark before you turn the oven off. Even when I use two sticks of butter, it absorbs it. I would try the one stick first and that technique next time, or use that technique with a half a stick and see what happens. When I was early on and testing it, if I didn't bake it long enough it stayed oily and never absorbed it all
I made this today, and I love it! Next time I will cut down on the butter to see how it affects the moisture; I used one and a half sticks this time. I love the taste, the solid brown crust, and how easy it is to pull together. I had all of the ingredients except that I only had whole psyllium husks, but I just pulverized some of it in a grinder, and it worked just fine. Will definitely use the tip above to use a thermometer. Thank you so much for this recipe! I hate the "best keto bread" that tastes like memory foam! 😂

I just made this, and it cost me about $11.00. I'm in Southern California. It is a bit expensive, especially with egg prices on the rise. At least it's Keto. I'm making excuses, I know... I cut the bread thinner than what regular bread is cut, and I only use 2 slices a day. I'm wondering if it freezes well... It tastes pretty good, and since I haven't been eating bread lately, it's so nice to have again, so thank you!
Even at your prices, I don't think that's very expensive. That and some meat and it's a full meal. People will spend $15 for a meal at McDonald's... I cut it thinner as well. I would cut it first and then freeze it so that you can thaw out as many pieces as you want at a time. It freezes perfectly. 😁
You may want to try my trick in the heat. I put my Emeril Lagasse "oven" out on my deck and I can cook what ever I like and keep the heat outside!

I rarely get to use that toaster 😁 I would recommend it with the one stick of butter, instead of the two but I have toasted plenty of this bread with two sticks in there as well, but it is kind of scary because it bubbles up. I would definitely recommend a toaster oven over to this for safety reasons, but I haven't burned down the house yet 🤞🏻
Oh Victor, I had to do it (crazy Grammy) I added caraway seeds & 1.5 tsp King Arthur's Deli Rye flavor, for a rye bread like taste) & dill weed. I just put my2nd loaf of bread in the oven. My 1st loaf was "as you prescribed" & off the charts fabulous!!! ...Ruben's anyone? 😋

Update-as I posted earlier, I tried to make this only I beat the egg whites separately and folded them in at the end. Didn't work. The eggwhites quickly lost their fluffiness as I tried to fold them in. The butter probably did that. However the loaf came out fine. Rose much more than I thought it would. It is very heavy on the pork rind taste so I hope to figure out how to get rid of that flavor.
That's what I found with the egg whites also. What kind of pork rinds did you use? I have found that the fresher they are, the less pork rindy they are... I also have something really good coming.. Just finishing up testing it this week. Still pork rinds but zero taste every time. We'll see after this week 😁

You can replace it with chicken flour. Almond flour should work as well, but I haven't tested it. I would use 2 sticks of butter with the chicken flour.

@@southernketo I just grind up peanuts that I get off Amazon in a food processor. I use Wegotnuts brand that comes in 5 pound bags. 3 cups of peanuts makes about 1 1/2 cups of peanut butter. Lately I've been adding 1/2 teaspoon of sea salt. YUM!

I had to mess around with it to get it to act right and I tried it without the baking powder before and just did what you said. For some reason, adding the baking powder in combination with the other stuff made it rise better. I thought it was weird and wouldn't have even tried baking powder except I was running out of cream of tartar and figured it would be the same. That was when I did my first perfect loaf 🍞

Definitely refrigerate it. I used that bread container like I showed in the video, but someone else said you can put it in a gallon freezer bag also. If you don't want to eat it all at once, you can always cut it up and freeze it and that works awesome! You can get a piece or two whenever you want it. You're welcome!

For non pork eaters dried chicken skins work instead of pork skins. You can dry your own or buy online from like Carnivore Crisps folks.

I made this read today with 2 sticks of butter…turned out great. Put mine in a metal sandwich loaf pan with a slide on lid. Temp checked after 60 minutes 200*F on the money & the loaf filled the pan just right. Forgot the lemon juice but it didn’t affect as far as I can see. Great taste & very rich with 2 sticks of butter & a bit greasy but looks & taste like bread with the ‘bread’ mouth feel. 👍👍. I wonder if you could sub 1:1 egg with sour dough starter discard, maybe 1 cup to get that sour dough taste.
Awesome! Sounds like you did it perfect! I did the 2 sticks of butter for 2 reasons, one was to make sure a sandwich was enough to make an entire meal and keep you full. It's not necessary, just adds some fat. Maybe so, I've never tried it, but I don't think it would hurt the results enough to not try it. 😁 Let me know if you do 🙏🏻

Just got done with this super creative bread. I wish I could upload a picture. It turned out amazing. It's high fat, moderate protein and low carb. If that isn't keto I don't know what is. Tip... I needed more pork rinds than initially thought to make it look like this one. No worries just crushed more. I didn't crush it quite fine enough so that's why it wasn't enough. Also when it sat in the oven with door open but oven off, unbeknownst to me the oils somehow found there way off the paper and onto the oven bottom. Went to preheat for something else and had a smokey kitchen in short order. You may want to learn from my mistake and put a sheet pan under it. Awesome, filling bread though!!

My suggest you would be to use mostly almond flour and a little coconut flour in there to make up the four cups. Now, I haven't tried this, but I believe it would work pretty good. Please let me know if you decide to try it so that I can let other people know as well 🙏🏻😁
I really wanted to like this, having made a similar recipe without the psyllium husk, but it took me well over an hour to prepare and then I ended up not liking it. I've found that fiber is not my friend and this type of powder gives a gritty texture to the bread. I even used the link to buy the one you had. I hoped that the small amount wouldn't matter, but I'm also concerned about possible blockages if not eaten with enough liquids. I was also surprised to learn that psyllium is commonly used in low carb baking, so if it works for you, that's great. Thanks for working so hard on developing recipes.

So I made this bread today and totally forgot to include the butter!🤦🏽♀️ Left it in the microwave! Funny thing is, it looked amazing and tasted fine though I toasted my piece. My husband who can’t do without his white bread, liked it as is and told me I should continue making without the butter. PS: I’m not a baker.😂
😳 oh wow! You may be onto something there... I included the butter to make it super filling and basically like a complete meal. That was one of my key ingredients from the beginning, so I never tried it without it. Maybe I'll have to give it a try 🤔😁

I’m not sure what part of the recipe is expensive? Granted having staples like baking soda, baking powder, cream of tartar, pink Himalayan salt are usually in one’s pantry. And I found that the cheap Walmart brand of pork rinds ended up being the best option - ingredients are pork rinds and salt. Every other brand had other stuff added which I didn’t want. So the 2 5 oz bags were exactly what I needed. And taking them out on the porch and using my rolling pin on them was therapeutic in so many ways lol! And I basically prepped them for the next loaf. I will need to go to a farm tomorrow to buy some quality eggs - they charge 3.00/dozen which is awesome price for free range chickens. You could use bottled lemon juice if you had to. And yes - if you can afford the better quality butter and cream cheese, that part is a bit pricey but I usually keep that on hand because - well, keto!
Also you can make your own butter by taking heavy whipping cream and beating it until it turns into butter. Add salt and wrap in parchment paper. The leftover whey can be used in different recipes but I’d probably give it to my dogs in one of their food toppers that I prepare for them. Keto isn’t just for humans!
My Husky Snickers lived to be almost 19. He was active his entire life and his weight maintained between 50-55 lbs his whole life. And yes I do feel that his diet played a part.

Man I have some bad memories from making bread recipes with psyllium husk but I’ll still give yours a try. A half recipe at least lol. All of my past ones from other ppl turned purple and have a weird sponge texture

I just made this bread with 1 stick of butter and placed it on a cookie sheet, just in case. It was a bit wet even after cooking the full 70 mins and then the additional 30 mins and cooling. However, I believe that was my issue, the bread pan was slightly smaller so, I had a lot loft. I'll try it again and adjust my temperatures and think that it would be fine once toasted. My husband hates pork rinds and I did the 50/50 pork panko/parmesan cheese. He thought that it tasted good but when he hears "bread" he thinks of old school bread. I think that it will make a great savory bread and could be a good bread for sunny side up eggs. I may try someone's suggestion of subbing chicken flour for psyllium husk powder.
Sure, it isn't on the cheap side to make but it's basically, a sliceable piece of fat and protein addition that you can sandwich other items or just eat as a slice. A grab and go item if needed.

Considering that people spend $15 for one meal at McDonald's these days, I don't think the price is bad at all... I would definitely try to check the internal temperature and make sure it gets to 200. Those are some great ideas! Enjoy!
@@southernketoI personally don't think that it's bad price-wise, I've purchased expensive "keto" ingredients for years and compared to that, it's quite inexpensive. However, the reality is that for some, who are in difficult financial situations, the accumulative cost does at up but it is offset by the fact that it's entirely made from protein and fat, which means that it is also quite filling so, a little goes a long way if one needed to stretch it out further. It's also mostly everyday items one would find in a Keto kitchen. Yes, I agree on the McDonalds reference but those people also likely are not going to McDonalds.
I like your recipe enough that I'm willing to work out my variables. I see the value, appreciate the work that you put in and convenience in using regular items instead of special ingredients, it has a great satiety profile and flexible use. You did a great job!

When your're leaving the bread in the oven for 30 min with the door open, have you turned off the oven or left it at 350?
Turn it off and that will help it cool slower and retains some of the heat to keep it from falling as much

Could you use beef gelatin instead of cream of tartar powder? Trying to eat as much collagen as possible, and love this recipe because the use of the pork rinds! Genius! Also wonder if you could replace the cream cheese for cottage cheese for more protein. I have to try it!
No, The cream of tartar is to help it rise. Unfortunately, I would say no on the cottage cheese substitution too... The cream cheese helps give it stability and the fat profiles are different
