Thanks for this. Here in Thailand ginger is plentiful but I have yet to find preserved ginger in syrup. I intend to use it to make a ginger and sultana cake that my mother used to make or, at least, it should be fun trying.
and how do you use it? I saw a gordon ramsey recipe for pear tart that used some of these, and that's about all I know about stem ginger, definitely not even a clue why it's called stem??!
It's used to make stem ginger biscuits (cookies - I'm in the UK), ginger cake etc. Lots of recipes using stem ginger on here 😋 Can also be used in curries.
Ok, I infused it with the orange peel & I love it! I get orange & ginger & then a zing! Thanks for this recipe!!
Just now making this. I ate a tangerine & decided to toss the peel in with the cooking ginger to give a subtle orange flavor. We’ll see how it goes!

Is the freezing to make the skin come off easy?

If you boil it you cook out the benefits of the ginger.
It's drenched in sugar so I'm not sure anybody is eating stem ginger for its health benefits... 😅
