    www.selfhacked.com/blog/scien...
    So here is the Recipe:
    Ingredients:
    Fresh, Plump Ginger
Raw Sugar (or your favorite granulated sugar)
    Water
    1. Peel the Ginger.
    2. Slice Ginger across the grain into thin wafers.
    3. Place in saucepan and cover with water.
    4. Bring just to a boil, then strain off the water (into a jar for later use.)
    5. Repeat step 4 two more times (unless you love fiery hot ginger!)
    6. Place 1/2 cup of the strained off liquid back into the pan.
    7. Add about 2 cups of sugar to the liquid and stir over medium heat until dissolved.
    8. Add ginger back in and allow to simmer until liquid is thick and has thoroughly coated every piece of ginger. (about 5 minutes).
    9. Spread a layer of sugar in a lipped cookie sheet.
    10. With 2 forks, lift ginger out of syrup and lay in single layer (not touching) across the surface of the prepared sugar tray.
    11. Generously sprinkle sugar to cover the ginger completely.
    12. Allow to cool several hours or even just overnight.
    13. Dig out the wonderful pieces of candied ginger and place in air tight container for use in teas, recipes, and just snacking!
    14. Share this video and recipe with a friend!

I also spoon drops of the "syrup" that's left over from the cooking process into the sugar so it doesn't go to waste. It hardens enough to pick them up to eat. The drops aren't as "hot" as the ginger is so it makes a really nice, tasty treat.

For diabetic people, you can use Palm sugar which does not effect your sugar levels.

If you steam (aka pressure cooker and steam basket) the ginger (like tomatoes and apples), then allow to cool, you can finger slide off the ginger skin, without all the fussiness of scraping or shaving. Then with a mandolin, you can shave the thinnest slices that are then boiled, with less boilings, and dropping into the ginger candy syrup. Then put out a waxed cookie sheet, and sprinkle with crystal sugar and (sea) salt, toss on the slices, and again sprinkle with sugar and salt. Allow to cool and dry for a very great taste sensation.

For the diabetics out there (or folks who are watching calories) you can put the ginger into a dehydrator instead of into sugar. If you don't have a dehydrator simply put the ginger slices on a parchment-lined baking sheet and set it in your over (no heat) for a couple of days or put it on bakers' drying racks so there is air flowing all around it and leave it there for a couple of days. Not as much fun to eat as the sugar-coated variety but DEFINITELY worth the effort!!!!!

My son is getting ready to start chemo and I was searching the internet for ginger chews to buy for him, but, they are so expensive! Then I searched youtube for a way to make them myself and came across your video. I've missed you. You have been gone for awhile. I love your videos and I am going to make these for my son to have when the chemo makes him so sick. I appreciate you so much! Before coming across your video I read through several recipes and they use corn starch and I know my son would not like that. But, the sugar will taste good to him and hopefully the ginger will ease his stomach. God bless and thank you so much!

You're bible quotes at the end of each video is a really nice touch and I look forward to hearing each one. What better way to end a video about survival food than to be able to thank the Lord for these gifts.
Finally, I must compliment you on your cleanliness and impeccable appearance. You are perfection.

Hi Christa, I was so happy to see the notification on my home page that you had posted another video. This video is wonderful! I love ginger like this but I have bought it before not made it homemade. I am so happy to know how to do this now!! I will definitely try this. Also, I wanted to let you know that if you cook about a cup of honey slowly on low on the stove with a large piece of grated ginger - maybe about 30 minutes or so - it makes something that it almost like a ginger marmalade!! Thanks again for sharing all your wisdom!! Love, Mary ❤️😘❤️

Candied ginger was my best friend while I was pregnant! Ginger alleviates nausea fast. When I was hit with morning sickness, which was frequently, I would just eat a piece of candied ginger and felt so much better within just a few minutes. If any of you have morning sickness or just general nausea, try it! I’ve heard it’s even great for motion sickness from car or airplane.

Such a nice video - and timely for me, too - the other day a friend gave me a large box of grapefruit - I let them ripen for a while and then juiced them - then candied the peels of a few - yum!! - made grapefruit powder from some - and froze the rest for whatever later. Thank you for sharing your candied ginger recipe!!
