This is a great recipe. I use to make candied ginger, my own varied citrus peels for fruitcake. The recipe was different, I would bring the ginger to a simmer 4 or 5 times with fresh water until it wasn't hot and then cook with sugar like you did at the end and then drain it on a wire rack. Your peeling it with a spoon is such a good idea for not wasting any of the ginger. Thank you for sharing that here, I am in San Pedro, California.

Aapko flame bilkul low rakhna hai.. Sugar syrup pakte pakte sugar ka pehle crystalization hona start ho jaega or vo sukhne lagegi.. Dhyan rahe flame low hi rakhe...tej karni hi nahi hai.. Or wide pan use kare..

Try adding the actual measurements to this. I'm pretty sure I added more sugar to the recipe at 100g because my ginger after 30 minutes had dissolved but it ended up turning dark and never ended up looking like your recipe. And I used about 5 whole large pieces of my ginger that I had harvested out of my garden. What a waste.
I tried this recipe but sugar got caramelised instead of crystalline
It sounds like you might have kept the heat too high. try lowering the flame next time to prevent caramelization.
